Ingredients
Chicken and Seasoning
- 1 1/2 pounds boneless, skinless chicken breasts or thighs (or both)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
Cooking
- 2 tablespoons olive oil
- 1/2 cup dry sherry
- 1/2 cup low-sodium chicken stock
- 1/4 cup Dijon mustard
- 2 tablespoons whole grain mustard
- 3 tablespoons honey
- fresh chopped herbs for topping (such as parsley, thyme, or chives)
Instructions
- Prep the oven and chicken: Preheat your oven to 400°F (200°C). Pat the chicken breasts or thighs completely dry with paper towels to ensure a good sear.
- Season the chicken: In a small bowl, whisk together salt, pepper, garlic powder, and smoked paprika. Sprinkle the seasoning liberally on both sides of each chicken piece for full flavor.
- Sear the chicken: Heat a large oven-safe skillet over medium-high heat and add olive oil. Once hot, add the chicken pieces. Cook for about 5 minutes on each side or until both sides are deeply golden brown. Don’t hesitate to raise the heat slightly to achieve a rich sear and color.
- Deglaze the pan with sherry: Pour in the dry sherry to deglaze the skillet, scraping up the browned bits from the bottom. The sherry should bubble briskly; cook for 1 to 2 minutes to reduce slightly. Then reduce the heat to low and let most of the sherry cook off.
- Make the sauce and coat chicken: In a bowl, mix together the chicken stock, Dijon mustard, whole grain mustard, and honey until combined. Pour this sauce over the seared chicken in the skillet, turning the pieces a few times to coat them evenly.
- Bake the chicken: Cover the skillet and place it in the preheated oven. Bake for 15 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
- Serve: Carefully remove the skillet from the oven. Sprinkle the chicken with fresh chopped herbs before serving. This dish pairs beautifully with salads, wraps, rice, and steamed vegetables for a wholesome meal.
Notes
- Dry chicken completely before searing to achieve a crispy, golden crust.
- Using an oven-safe skillet like cast iron ensures even cooking from stovetop to oven.
- Adjust honey quantity based on your preferred sweetness level.
- If you don’t have dry sherry, a dry white wine or apple cider vinegar diluted with water can be substituted.
- Ensure the chicken is cooked to a safe internal temperature of 165°F (74°C) for best food safety.
- Leftovers store well in the refrigerator for up to 3 days and can be reheated gently on stovetop or microwave.
