Wet Ingredients
- 2 eggs
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 1/2 cup honey
- 1/2 cup water
- 1 tsp vanilla extract
Dry Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a loaf pan with cooking spray or butter to ensure the cake doesn’t stick.
- Whisk Eggs: Crack the two eggs into a mixing bowl and whisk them well using a fork until lightly beaten.
- Add Brown Sugar: Add the brown sugar to the eggs and whisk until combined and smooth.
- Mix Wet Ingredients: Pour in the vegetable oil, honey, water, and vanilla extract. Stir all the wet ingredients together until fully mixed.
- Add Dry Ingredients: In a separate bowl or directly into the wet mixture, add flour, baking soda, baking powder, cinnamon, and salt. Stir gently just until everything is blended together; avoid overmixing.
- Pour Batter into Pan: Transfer the batter into the prepared loaf pan, spreading it evenly.
- Bake the Cake: Place the loaf pan in the preheated oven and bake for 45 minutes. Check for doneness by inserting a toothpick into the center of the cake. If it comes out clean, the cake is done. If not, bake for an additional 5 to 10 minutes, then check again.
- Cool and Serve: Once baked, remove the cake from the oven and allow it to cool in the pan for 30 minutes. After cooling, invert the cake onto a serving platter, slice, and enjoy.
Notes
- Ensure to coat both the bottom and sides of the loaf pan with cooking spray or butter to prevent sticking and make cleanup easier.
- Measure vegetable oil first before honey to make it easier to pour the sticky honey out of the measuring cup.
- Because honey caramelizes during baking, the exterior of the cake may appear darker or browner, but this doesn’t mean it’s overcooked.
