Ingredients
Base Syrup
- 1 cup water
- 1/2 cup sugar
- pinch of salt
- 1/2 cup fresh basil leaves
Fruit Mixture
- 3 cups strawberries, tops cut off and quartered
- 1/2 cup 100% pineapple juice
- juice of 1/2 lime
Instructions
- Prepare the syrup: Combine water, sugar, and a pinch of salt in a small saucepan. Bring the mixture to a boil over medium heat, stirring until all the sugar dissolves completely.
- Infuse the basil: Remove the saucepan from heat and stir in the fresh basil leaves. Let this infusion stand for 30 minutes to allow the basil flavor to infuse thoroughly.
- Puree the strawberries: Meanwhile, process the quartered strawberries in a food processor or blender until smooth and creamy.
- Blend all ingredients: Add the cooled sugar and basil syrup, pineapple juice, and lime juice to the pureed strawberries. Continue processing until the mixture is uniformly blended and smooth.
- Strain the mixture: Pour the blended mixture through a fine mesh strainer into a bowl to remove any solids or basil leaves, ensuring a silky smooth texture.
- Freeze in ice cream maker: Transfer the strained sorbet liquid into the canister of an ice cream maker and freeze according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Firm up in freezer: Spoon the sorbet into a freezer-safe container and place it in the freezer for at least 1 hour or until firm enough to scoop.
- Serve: Garnish with fresh strawberries if desired and enjoy your refreshing homemade strawberry basil sorbet.
Notes
- For best flavor, use ripe, fresh strawberries.
- Adjust sugar to taste depending on the sweetness of your fruit.
- If you don’t have an ice cream maker, pour mixture into a shallow dish and freeze, stirring every 30 minutes until firm.
- The basil infusion adds a subtle herbal note; avoid using too much to keep flavors balanced.
- Store leftover sorbet in an airtight container to prevent freezer burn.
