This classic French macaron recipe combines almond flour, egg whites, and sugar to create delicate, crispy shells with a smooth and creamy French buttercream filling. Ingredients
Macaron Shells
- 100 g egg whites (room temperature, approx. 3 large eggs)
- 140 g almond flour (1 1/2 cups)
- 90 g granulated sugar (just under 1/2 cup)
- 130 g powdered sugar (1 cup)
- 1 tsp vanilla extract (5 mL)
- 1/4 tsp cream of tartar (800 mg)
French Buttercream Filling
- 1 cup unsalted butter, softened (226 g)
- 5 egg yolks
- 1/2 cup granulated sugar (100 g)
- 1 tsp vanilla extract
- 3 tbsp water (30 mL)
- 1 pinch salt
Instructions
- Prepare dry ingredients: Sift the powdered sugar and almond flour together into a bowl to remove lumps and ensure a smooth batter.
- Whip egg whites: Place the room temperature egg whites in a very clean bowl. Using an electric mixer, whisk until foamy. Add cream of tartar, then gradually and slowly add the granulated sugar while continuing to beat.
- Add flavor and color: Mix in the vanilla extract and food coloring if desired. Continue beating until stiff, glossy peaks form.
- Fold in dry ingredients: Gently fold in one-third of the dry ingredients into the meringue until partially combined. Carefully add the remaining dry ingredients and fold gently until the batter flows like lava and can fall in a figure eight without breaking.
- Pipe the macarons: Transfer the batter to a piping bag fitted with a medium round tip and pipe 1-inch dollops onto parchment-lined baking sheets. Dab a small amount of batter under the parchment to glue it down. Tap the tray firmly on the counter to release air bubbles.
- Rest the shells: Allow the piped shells to sit at room temperature for about 40 minutes until a skin forms on the surface and they are no longer sticky to the touch.
- Bake the shells: Preheat oven to 300°F (150°C). Bake the shells for 12–15 minutes, rotating the tray halfway through after 7 minutes for even baking. Let cool completely before removing from the baking sheet.
- Make sugar syrup: In a medium saucepan, combine the granulated sugar and water. Heat over low heat, stirring until the sugar dissolves. Increase the heat to medium-high and bring the syrup to a boil until it reaches 240°F (115°C).
- Beat egg yolks: Place egg yolks in a stand mixer fitted with a whisk attachment and whip until thick and foamy.
- Incorporate hot syrup: Slowly drizzle the hot sugar syrup into the yolks while the mixer is running. Continue whipping until the bowl feels cool to the touch and the mixture has cooled to room temperature.
- Add butter and flavor: Add softened butter one cube at a time, fully incorporating each before adding the next. Mix in vanilla extract and a pinch of salt. Beat until the buttercream is smooth, creamy, and light, about 5–6 minutes. Add food coloring if desired.
- Assemble macarons: Pipe the buttercream filling onto the flat side of half the cooled shells. Top with the remaining shells to form sandwiches.
- Age macarons: For best texture and flavor, refrigerate the assembled macarons for 1–3 days to allow the filling to soften the shells internally.
