Ingredients

Dough Ingredients

  • 4 ⅔ cups bread flour
  • 3 tablespoons granulated sugar (divided)
  • 2 teaspoons instant yeast
  • 2 teaspoons kosher salt
  • 1 ⅔ cups warm water

Topping Ingredients

  • 1 egg white + 1 tablespoon water (for the egg wash)
  • 3 tablespoons everything bagel seasoning


Instructions

  1. Mix Dough: Combine flour, 1 tablespoon of granulated sugar, instant yeast, and kosher salt in the bowl of a stand mixer fitted with a dough hook. Slowly add warm water on low speed until a shaggy dough forms.
  2. Knead Dough: Transfer the dough to a smooth work surface and knead by hand for 3-4 minutes until soft and smooth. Adjust with small additions of flour or water if sticky or too dry.
  3. First Rise: Place dough in a large greased bowl, cover with plastic wrap, and let it rise for 60-90 minutes until doubled in size.
  4. Shape Bagels: Divide risen dough into 10 equal pieces (~111g each). Roll each piece into a ball, then use your thumb to poke through the center and stretch the hole to form a bagel shape. Cover with a clean towel and rest for 20 minutes.
  5. Preheat & Prepare: Preheat oven to 425°F. Line two baking sheets with parchment paper or silicone mats. Bring 2 quarts of water with 2 tablespoons sugar to a boil.
  6. Boil Bagels: Boil bagels for 45-60 seconds on each side; they should float. Boil 2-3 at a time to allow room to expand. Remove with a slotted spoon, drain excess water, and place on baking sheets. Reshape if necessary.
  7. Apply Egg Wash & Toppings: Whisk egg white and water to create egg wash. Lightly brush bagels and sprinkle generously with everything bagel seasoning or dip bagels into the seasoning.
  8. Bake: Bake for 20-22 minutes, flipping and rotating pans halfway, until golden brown. Let bagels cool completely before slicing and serving.

Notes

  • Make sure to make the hole in the bagel larger than you think, as they will expand during boiling and baking.
  • If bagels do not float during boiling, it may indicate the dough hasn’t risen enough or is too dense.
