Description

This classic homemade Apple Pie recipe features a flaky, buttery crust filled with tender, perfectly spiced apples. Sweetened with brown sugar and enhanced with cinnamon and a touch of lemon juice, this pie is baked to golden perfection—ideal for a comforting dessert that serves 8.

Ingredients

Pie Crust

  • 1 Perfect Pie Crust Recipe (enough for double crust)

Filling

  • ¼ cup butter
  • 8 cups thinly sliced apples, peeled and cored
  • ⅔ cup lightly packed brown sugar
  • 1 tablespoon all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt

Egg Wash and Topping

  • 1 egg
  • 1 teaspoon water
  • Coarse sugar (optional, for sprinkling)

Instructions

  1. Prepare the Pie Plate and Oven: Set aside a 9-inch pie plate and preheat your oven to 425°F (220°C) to get ready for baking.
  2. Cook the Apple Filling: In a large pot over medium-low heat, melt ¼ cup butter. Add 8 cups of thinly sliced, peeled, and cored apples along with ⅔ cup brown sugar, 1 tablespoon all-purpose flour, 2 teaspoons cinnamon, 1 teaspoon lemon juice, and ¼ teaspoon salt. Stir the mixture occasionally and cook until the apples soften, about 8 to 10 minutes. Remove from heat and allow to cool.
  3. Roll Out the Bottom Crust: If not already divided, split your prepared pie dough into two discs. Lightly flour a work surface and roll one disc out to about ⅛-inch thickness, making it slightly larger than the 9-inch pie plate. Gently place this dough into the pie plate, pressing it to fit the bottom and sides.
  4. Make Egg Wash: In a small bowl, whisk together 1 egg and 1 teaspoon water. Set this mixture aside for brushing the crust later.
  5. Assemble the Pie: Pour the cooled apple filling into the prepared crust. Roll out the second dough disc on a lightly floured surface and place it over the filling. You can either cover the pie completely or cut the dough into strips to braid as a lattice top. Cut vents into the top crust if using a full cover. Trim any excess dough, then crimp the edges to seal the pie.
  6. Apply Egg Wash and Sugar: Lightly brush the top crust with the egg wash to help it brown nicely. If desired, sprinkle coarse sugar evenly over the top for extra crunch and sweetness.
  7. Bake the Pie: Place the pie in the oven and bake at 425°F for 15 minutes. Then reduce the temperature to 350°F (175°C) and continue baking for about 40 minutes, or until the crust is golden brown and the filling bubbles through the vents. If the crust starts browning too quickly, cover it loosely with aluminum foil.
  8. Cool and Serve: Remove the pie from the oven and allow it to cool before slicing and serving to let the filling set.

Notes

  • Use firm, tart apples like Granny Smith or Honeycrisp for the best texture and flavor.
  • Precook the filling helps prevent a soggy crust and ensures the apples are tender.
  • Egg wash gives the crust a beautiful golden color and shine.
  • Cover the pie edges with foil or a pie shield if they brown too quickly during baking.
  • Allow the pie to cool fully to set the filling and make slicing easier.
