Ingredients
Wet Ingredients
- 4 Tbsp salted butter, room-temperature
- 1/4 cup cooking oil
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1.5 cups mashed ripe bananas (about 3-4 bananas)
- 2 large eggs
- 1 tsp vanilla extract
Dry Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 1/4 tsp cinnamon
Optional
- 1/2 cup chopped walnuts
Instructions
- Preheat and Cream Butter and Sugars: Preheat the oven to 350ºF. In a mixing bowl, beat together the room-temperature butter, cooking oil, granulated sugar, and brown sugar using a hand mixer or stand mixer until the mixture is light and creamy.
- Add Bananas and Wet Ingredients: Mash the ripe bananas thoroughly. Add the mashed bananas, eggs, and vanilla extract to the creamed butter and sugar mixture. Beat until the ingredients combine into a smooth batter.
- Combine Dry Ingredients: In a separate bowl, stir together the all-purpose flour, baking soda, salt, ground nutmeg, and cinnamon until evenly mixed.
- Mix Wet and Dry Ingredients: Pour the dry flour mixture into the wet ingredients bowl. Gently fold together until just combined; be careful not to overmix to ensure a tender crumb.
- Add Walnuts: Fold in the chopped walnuts if using, distributing them evenly throughout the batter.
- Prepare Loaf Pan and Add Batter: Grease an 8.5″x4.5″ loaf pan with butter or oil. Pour the batter into the pan and smooth the surface evenly.
- Bake the Banana Bread: Bake in the preheated 350ºF oven for about 60 minutes, or until the top is deeply golden brown, a crack forms down the center, and a toothpick inserted into the middle comes out clean or with just crumbs.
- Cool and Serve: Allow the loaf to cool for 5 minutes in the pan before gently removing it. Let it finish cooling on a wire rack, then slice and serve.
- For Banana Muffins (Optional): Prepare the batter as above, then divide it evenly into 12 muffin wells. Bake at 350ºF for 30 minutes or until risen, golden, and a toothpick comes out clean.
Notes
- Room-temperature butter helps achieve a creamy mixture when creaming with sugars.
- Do not overmix the batter once dry and wet ingredients are combined to keep the bread tender.
- Check for doneness with a toothpick; wet batter indicates the need for more baking time.
- Walnuts are optional but add a nice crunch and flavor contrast.
- You can substitute cooking oil with an equal amount of melted butter if preferred.
- Ripe bananas with dark spots yield the best sweetness and flavor for the bread.
