Ingredients
Red Heart Cake
- 75 g unsalted butter, softened
- 75 g caster sugar
- 1 egg
- 1 tsp vanilla extract
- 75 g self-raising flour
- ½ tsp red food colouring
Vanilla Cupcake Batter
- 250 g unsalted butter, softened
- 250 g caster sugar
- 2 tsp vanilla extract
- 4 eggs
- 250 g self-raising flour
Buttercream Frosting
- 200 g unsalted butter, softened
- 400 g icing sugar
- 3-4 tbsp semi-skimmed milk
Instructions
- Prepare Red Cake Batter: Preheat the oven to 170ºC fan assisted (190ºC non-fan). Line a 20x20cm square tin with baking parchment. Beat the butter and caster sugar until pale and fluffy, then add the egg and vanilla extract slowly while mixing. Stir in the self-raising flour until combined. Add enough red food colouring to create a bright red batter.
- Bake Red Cake: Pour the red batter into the prepared tin, smoothing it flat. Bake for approximately 14 minutes, or until a cocktail stick inserted comes out clean. Let the cake cool slightly.
- Make Vanilla Cupcake Batter: While the red cake cools, prepare the vanilla batter by repeating the same method as the red batter but without any food colouring—beat butter and sugar until pale, add eggs and vanilla, then fold in flour.
- Cut Out Red Hearts: Once the red cake is cool enough to handle, use a small heart-shaped cutter to cut out heart shapes from the red cake layer.
- Fill Cupcake Cases: Line a cupcake tin with cases. Spoon about 1 tablespoon of vanilla batter into each case and smooth it evenly over the bottom.
- Insert Red Hearts: Place one red heart vertically into the center of each cupcake case on top of the vanilla batter.
- Add More Vanilla Batter: Cover the hearts with additional vanilla batter until each cupcake case is approximately three-quarters full. It is okay if the red heart is not completely covered.
- Bake Cupcakes: Bake the filled cupcake cases in the oven at 170ºC fan assisted (190ºC non-fan) for 14 minutes or until a cocktail stick comes out clean. Allow cupcakes to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
- Make Buttercream Frosting: Beat softened butter and icing sugar together until smooth. Gradually add semi-skimmed milk until the frosting achieves a smooth, pipe-able consistency.
- Decorate Cupcakes: Use a piping bag fitted with a large star tip to pipe the buttercream frosting onto each cupcake in a swirling rose pattern, starting from the center and moving outward in a circular motion.
