  • ¾ cup dry champagne (sparkling wine or white wine)
  • 4 tablespoons unsalted butter
  • ¾ cup freshly grated parmesan cheese

Herb Brown Butter Scallops

  • 3 tablespoons unsalted butter
  • 1 ½ pounds scallops
  • Kosher salt and pepper, to taste
  • 2 garlic cloves, minced
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives


Instructions

  1. Prepare Stock: In a saucepan or stock pot, heat the chicken or vegetable stock on low until warm to keep it ready for adding to the risotto.
  2. Sauté Aromatics: In another saucepan over medium-low heat, heat the olive oil. Add the minced garlic with a pinch of kosher salt and pepper, stirring gently. This infuses the oil and provides a flavor base.
  3. Toast Rice: Stir in the arborio rice and cook, stirring often, for 3 to 5 minutes until the rice becomes translucent, indicating it is properly toasted for risotto.
