Description

This hearty and healthy Cabbage Soup Diet recipe is a flavorful, low-calorie soup packed with fresh vegetables and a rich beef broth base. Perfect for cleansing or light meals, this easy-to-make soup combines cabbage, bell peppers, onions, and aromatic herbs simmered to perfection to create a comforting and nutritious dish.

Ingredients

Vegetables

  • 2 small Yellow Onions, diced
  • 1 head Cabbage, medium, chopped
  • 1 cup Tomatoes, diced
  • 3 stalks celery, sliced
  • 1 Red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 3 tsp Garlic, minced

Liquids and Seasonings

  • 3 cups Beef Broth
  • 1 tsp Thyme, fresh
  • Salt and Pepper if desired
  • 2 tbsp Olive Oil
  • 1 tbsp Tomato Paste

Instructions

  1. Heat Olive Oil: In a large Dutch oven, heat the olive oil over medium heat to prepare for sautéing the vegetables.
  2. Sauté Vegetables: Toss in the diced onions, all three colors of diced bell peppers, and the diced tomatoes, cooking on medium-high heat for 4 to 6 minutes until they begin to soften.
  3. Add Aromatics and Tomato Paste: Stir in the minced garlic, fresh thyme, salt and pepper to taste, and the tomato paste, combining well with the vegetables and cooking for an additional 2 minutes to develop flavors.
  4. Add Broth: Pour in the 3 cups of beef broth to the pot, mixing thoroughly with the sautéed ingredients.
  5. Add Cabbage: Incorporate the chopped cabbage into the soup, stirring to distribute evenly.
  6. Bring to Boil: Increase the heat to bring the mixture to a rolling boil.
  7. Simmer Soup: Reduce the heat to low and let the soup simmer gently for 15 to 20 minutes, allowing the flavors to meld and cabbage to soften.
  8. Serve: Once cooked, ladle the soup into bowls and enjoy hot as a nutritious meal or cleansing dish.
