Ingredients
Crust
- 20 Oreo cookies (finely ground)
- 3 tablespoons butter (melted)
Filling
- 2 8-ounce packages cream cheese (softened)
- 1/2 cup sugar
- 2 tablespoons sour cream
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 eggs (room temperature)
Topping
- 1/3 cup seedless raspberry jam
Instructions
- Preheat Oven: Preheat your oven to 300°F (150°C) to prepare for baking the mini cheesecakes.
- Prepare Crust: In a medium bowl, combine the finely ground Oreo cookie crumbs with melted butter. Evenly divide this mixture into 12 heart-shaped or regular muffin cups that have been sprayed with non-stick cooking spray. Use your fingers or the rounded end of a wooden spoon to firmly press the crust down evenly to form a compact base.
- Make Cheesecake Filling: In a mixing bowl, beat the softened cream cheese and sugar at medium speed until the mixture is smooth and creamy. Then blend in the sour cream, vanilla extract, and a pinch of salt for added flavor. Add the eggs one at a time, mixing just until each is incorporated; be careful not to overmix to keep the batter light.
- Fill Muffin Cups: Spoon the cheesecake batter into each muffin cup, filling almost to the top. Place the raspberry jam into a zip-top bag and microwave it for a few seconds until the jam is fluid but not hot. Pipe about a teaspoon of the warmed jam on top of each cheesecake and use a knife or toothpick to swirl the jam into the batter, creating an attractive marbled design.
- Bake the Cheesecakes: Bake the cheesecakes in the preheated oven for 18 to 20 minutes or until they are set but still slightly jiggly in the center. Remove from the oven and allow them to cool to room temperature.
- Chill: Once cooled, cover the cheesecakes with plastic wrap and refrigerate for at least 4 hours or overnight to let them firm up and develop their flavors.
- Serve: Keep the mini cheesecakes refrigerated until ready to serve. Enjoy them chilled, as delightful bite-sized treats with a perfect balance of creamy and fruity flavors.
Notes
- For best texture, ensure cream cheese is fully softened before mixing.
- Do not overmix the batter after adding eggs to avoid dense cheesecake.
- Use seedless raspberry jam to avoid berry seeds in the swirls.
- Mini cheesecakes can be stored covered in the refrigerator for up to 3 days.
- For easier removal, line muffin cups with parchment liners or silicone molds.
