Description

These delightful heart-shaped donuts are fluffy, soft, and perfectly fried to a golden brown. Made from a rich yeast dough that rises beautifully, these homemade donuts are finished with a light dusting of powdered sugar, making them an irresistible treat for special occasions or anytime you crave a sweet, comforting snack.

Ingredients

Dough

  • 1 cup whole milk, warm
  • 2 ¼ teaspoons active-dry yeast (1 packet)
  • ¼ cup sugar
  • 2 large eggs (at room temperature)
  • ¼ cup unsalted butter, melted and lukewarm
  • ½ teaspoon salt
  • 4 cups all-purpose flour

For Frying and Finishing

  • Vegetable oil (for frying, enough to fill 3 inches in a deep pot)
  • Powdered sugar (for sprinkling)

Instructions

  1. Activate the yeast: In a small bowl, combine the warm whole milk, active-dry yeast, and sugar. Let it sit for 5-10 minutes until foamy, indicating that the yeast is active. This step kickstarts the fermentation process crucial for fluffy donuts.
  2. Prepare wet ingredients: In a mixing bowl, whisk together the eggs, melted and lukewarm unsalted butter, and salt to blend all wet ingredients smoothly.
  3. Combine ingredients: Add the yeast mixture and 2 cups of flour to the egg mixture and stir well. Gradually add the remaining flour while mixing until a cohesive dough forms. Adjust flour quantity slightly depending on humidity and dough consistency.
  4. Knead the dough: Using a stand mixer with a dough hook, knead for about 5-7 minutes until smooth and slightly sticky. If kneading by hand, turn the dough onto a lightly floured surface and knead for 8-9 minutes until elastic and soft. Add flour sparingly if too wet, careful not to dry it out.
  5. First rise: Place the dough in a lightly oiled bowl, turning to grease all sides. Cover with plastic wrap or a kitchen towel and let it rise in a warm place for 1.5 to 2 hours until doubled in size, developing flavor and texture.
  6. Shape the donuts: Gently punch down the dough to release air, then transfer to a floured surface and roll out to about ½ inch thickness. Use a heart-shaped cookie cutter to cut out donuts, re-rolling scraps as needed.
  7. Second rise: Place the cut donuts on a parchment-lined baking sheet. Cover loosely with a clean towel and let them rise for 30-45 minutes until puffed but not doubled.
  8. Heat oil: Pour vegetable oil into a deep fryer or large saucepan to about 3 inches depth. Heat to 350°F (180°C) using a thermometer to maintain consistent temperature for perfect frying.
  9. Fry the donuts: Carefully add 2-3 donuts at a time to avoid overcrowding. Fry for 1-2 minutes per side, turning once, until they are golden brown and cooked through.
  10. Drain and cool: Remove the donuts with a slotted spoon and place them on a wire rack over paper towels to drain excess oil and cool slightly.
  11. Finish and serve: While still warm, dust the donuts generously with powdered sugar. Serve immediately for the best texture and flavor.

Notes

  • Ensure the milk is warm, not hot, to prevent killing the yeast.
  • Use a thermometer for accurate oil temperature to avoid greasy or undercooked donuts.
  • Donuts are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
  • Re-roll scraps gently to avoid tough donuts.
  • You can substitute vegetable oil with canola or peanut oil for frying.
