Description

This Healthy Spinach Artichoke Dip is a creamy, dairy-free, and vegan-friendly appetizer perfect for any occasion. Made with soaked raw cashews and dairy-free mayonnaise, it delivers all the classic flavors of traditional spinach artichoke dip without the heavy cream or cheese. Baked to perfection, this flavorful dip pairs wonderfully with tortilla chips or fresh vegetables, making it a nutritious and crowd-pleasing snack.

Ingredients

Cashew Sauce

  • 1 cup raw cashews (soaked overnight)
  • 1 ¼ cup vegan mayonnaise
  • ¼ cup water

Vegetables & Seasoning

  • 16 ounces frozen spinach (thawed and drained)
  • 1 (13.5-ounce) jar artichoke hearts (chopped and drained)
  • ⅓ cup finely chopped yellow onion
  • 4 garlic cloves (minced)
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  1. Blend the sauce: Preheat your oven to 400°F (200°C). In a food processor, combine the soaked raw cashews, vegan mayonnaise, and water. Blend for 1 to 2 minutes until the mixture turns smooth and creamy, forming the base of your dip.
  2. Mix the dip: Transfer the creamy cashew sauce into a large mixing bowl. Add the thawed and drained spinach, chopped artichoke hearts, finely chopped onion, minced garlic, kosher salt, and ground black pepper. Stir everything together until it’s well combined and evenly mixed.
  3. Bake the dip: Spoon the mixture into a baking dish, spreading it evenly. Place it in the preheated oven and bake for 20 minutes to allow the flavors to meld and the dip to heat through. Once warm and slightly bubbly, remove from the oven and serve immediately with tortilla chips, cucumber slices, or other fresh vegetables for dipping.

Notes

  • Soak cashews overnight or for at least 6 hours in water to soften for blending.
  • Make sure to fully thaw and drain the frozen spinach to avoid excess water in your dip.
  • For an extra kick, consider adding a pinch of red pepper flakes or a squeeze of fresh lemon juice.
  • This dip can be prepared ahead of time and baked just before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat before serving.
