Batter Ingredients

  • 1 1/2 cups (355ml) low fat milk
  • 3 large eggs
  • 1 1/2 Tbsp real maple syrup
  • 1 tsp vanilla extract
  • 1 1/3 cups (160g) oat flour
  • 3 Tbsp (29g) all purpose flour
  • 1/4 tsp salt
  • 2 Tbsp (28g) melted butter
  • Avocado oil or olive oil cooking spray (for cooking)


Instructions

  1. Prepare the Batter: Add the low fat milk, eggs, maple syrup, and vanilla extract into a blender. Then, add oat flour, all purpose flour, salt, and melted butter. Cover and blend on low speed until all ingredients are well combined, about 10 seconds, creating a smooth batter.
  2. Heat the Skillet: Place a 10-inch non-stick skillet over medium heat and let it warm up thoroughly to ensure even cooking of the crepes.
  3. Coat the Pan: Spray inside the bottom of the heated pan evenly with avocado oil or olive oil cooking spray to prevent sticking.
  4. Cook the Crepes: Pour a scant 1/3 cup of the crepe batter into the pan. Immediately tilt and swirl the pan to spread the batter into a thin, even layer covering the bottom of the pan.
  5. First Side Cooking: Cook until the bottom is golden brown, watching carefully to avoid burning. This usually takes a couple of minutes.
  6. Flip the Crepe: Use an offset spatula to gently lift one side of the crepe and then flip it to the opposite side. Cook this side until it turns just golden brown as well. If the pan gets too hot, reduce the burner temperature slightly.
  7. Transfer and Keep Warm: Transfer the cooked crepe to a wire rack to cool slightly. Repeat the process with the remaining batter.
  8. Manage Batter Thickness: Note that as the batter rests, it will thicken. Thin it by adding a few more tablespoons of milk as needed to maintain easy pouring consistency.
  9. Serve: Stack the crepes by folding into fourths or layering between tea towels to keep warm until ready to serve.
