Description

This Healthy Greek Yogurt Caesar Dressing is a light and creamy alternative to traditional Caesar dressings, made with non-fat Greek yogurt and enhanced with fresh lemon juice, pickle juice, Dijon mustard, and garlic. It offers a tangy, flavorful profile without the heaviness, perfect for salads, wraps, and pasta dishes.

Ingredients

For the Dressing

  • ⅔ cup non-fat plain Greek yogurt (such as Chobani 0%)
  • 1 – 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice (about ½ a lemon)
  • 2 tbsp pickle juice (Kosher Dill recommended)
  • 1 tbsp Dijon mustard
  • 2 – 3 large garlic cloves, minced
  • ¾ tsp freshly ground black pepper
  • ¼ tsp salt (optional)

Instructions

  1. Combine Ingredients: In a small mixing bowl, whisk together the non-fat Greek yogurt, 1 tablespoon of extra virgin olive oil, freshly squeezed lemon juice, pickle juice, Dijon mustard, minced garlic cloves, freshly ground black pepper, and optional salt until smooth and well blended.
  2. Adjust Consistency and Flavor: After whisking, taste the dressing and decide if you want it richer. If so, add the remaining tablespoon of olive oil and whisk again. Adjust seasoning by adding additional salt, pepper, or a squeeze more lemon juice according to your preference.
  3. Store Properly: Transfer the dressing to an airtight container and refrigerate. It will keep fresh for up to 6 days. Use it as a healthier alternative on Caesar salads, chicken Caesar pasta salads, crispy salmon Caesar salad, or buffalo chicken Caesar wraps.

Notes

  • Use fresh garlic for the best flavor; you can mince it finely or use a garlic press.
  • Pickle juice adds a unique tangy depth; if unavailable, substitute with a splash of apple cider vinegar.
  • Adjust olive oil quantity to control the richness and caloric content.
  • Store in a sealed container and consume within 6 days for optimal freshness.
  • Perfect as a low-fat, protein-rich Caesar dressing alternative for health-conscious diets.
