Description

This Healthy Crepe Recipe uses almond milk to create a dairy-free, light, and delicious crepe perfect for breakfast or dessert. Combining whole-wheat and all-purpose flour results in a nutritious yet tender crepe. The batter is blended and rested for optimal texture, then cooked on the stovetop in a lightly oiled pan. Sweetened lightly with maple syrup or honey, these crepes serve as a versatile base for both sweet and savory fillings.

Ingredients

Crepe Batter

  • 1 cup unsweetened almond milk
  • 4 large eggs
  • 1/4-1/2 cup water (depending on desired crepe thinness)
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup whole-wheat flour
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Blend Ingredients: Place all ingredients in a blender in the order listed and blend until smooth. Use a spatula to scrape down the sides to ensure all the flour is mixed in. Let the batter stand for 30 minutes to hydrate the flours and achieve a better texture.
  2. Preheat Pan: Over medium heat, melt and swirl about half a teaspoon of coconut oil in an 8 or 10-inch frying pan. Alternatively, use cooking spray to lightly grease the pan.
  3. Pour Batter Thinly: Tilt the pan and pour about 1/3 cup of batter on one side, quickly swirling to evenly cover the pan in a thin layer.
  4. Form Edges: Immediately use a spatula to gently push down the thin edges of the crepe around the pan’s perimeter to encourage an even shape.
  5. Cook First Side: Cook for about 1 minute until the bottom is golden brown.
  6. Flip Crepe: Carefully flip the crepe over without tearing it.
  7. Cook Other Side: Cook for another 30 seconds to 1 minute (or longer for crispier crepes).
  8. Serve: Transfer the cooked crepe to a plate and continue with the remaining batter. Serve with your preferred fillings or toppings.

Notes

  • Adjust water quantity to modify crepe thinness and texture.
  • Resting the batter improves crepe tenderness and prevents tearing.
  • Use a non-stick pan for easier flipping.
  • Crepes can be served sweet or savory depending on fillings.
  • Use dairy-free oil options to keep recipe vegan-friendly, if desired.
