Description

This Hasselback French Toast recipe transforms a traditional breakfast favorite into an eye-catching and delicious dish. By slicing a baguette into thick sections and carefully partially cutting through to create a ‘hasselback’ effect, the bread absorbs a flavorful custard mixture and is stuffed generously with fresh or frozen blueberries. Baked until golden and crispy on the outside and tender inside, this dish makes an impressive and tasty brunch centerpiece served with powdered sugar and maple syrup.

Ingredients

French Toast Mixture

  • 1.5-2 cups milk
  • 3-4 eggs
  • 3 tablespoons sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt

Bread and Filling

  • 1 baguette (about 21-24 inches)
  • ¾ cups blueberries (fresh or frozen)

For Serving

  • Powdered sugar
  • Maple syrup

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper and lightly grease it with oil or butter, ensuring you cover the sides as well.
  2. Prepare the baguette: Cut the baguette into quarters or thirds, depending on what fits best in your baking pan. Create the hasselback effect by making 1-inch deep slices halfway through each baguette piece, taking care not to cut all the way through. To avoid slicing completely, place thick objects like reusable metal straws, butter knives, or forks along each side of the bread as guides.
  3. Make the custard mixture: In a large bowl, whisk together the milk, eggs, sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  4. Soak the bread: Submerge the hasselback baguette pieces into the custard mixture. Press them down gently to soak up as much liquid as possible. Carefully open each slice to pour a few tablespoons of the custard in between, ensuring even absorption. Let the bread soak for about 5 minutes.
  5. Add blueberries: Transfer the soaked baguette pieces to the prepared baking pan. Carefully insert 5-10 blueberries between each slice, gently opening the baguette to make room without breaking it apart. If the bread breaks, simply press the pieces back together.
  6. Top with custard and bake: Pour an additional few tablespoons of the custard mixture over each baguette piece. Bake in the preheated oven for 35-40 minutes, or until the top is golden and crispy, the center is cooked through, and the blueberries begin to burst and release their juices.
  7. Serve: Let the French toast cool for a few minutes. Sprinkle with powdered sugar and serve warm with maple syrup and fresh berries on the side for extra flavor.

Notes

  • The soaking time is essential to ensure the bread is fully infused with the custard mixture and baked to perfection.
  • To prevent slicing too deeply when hasselbacking, use thick tools like metal straws or butter knives as guides on either side of the baguette.
  • You can adjust the amount of milk and eggs depending on the baguette size and desired custard consistency; 1.5 cups milk and 3 eggs suffice for a smaller baguette, while 2 cups milk and 4 eggs work for a larger one.
  • Frozen blueberries work great but thaw them slightly before inserting to prevent the baguette from getting soggy.
  • Feel free to add fresh berries on the side for garnish and extra freshness when serving.
