- Whisk Eggs: In a bowl, thoroughly whisk the eggs with salt and pepper until the mixture is smooth and slightly frothy. This ensures a light and fluffy omelette.
- Add Vegetables: Mix in the chopped green onions and grated or chopped carrots, whisking again to distribute the ingredients evenly throughout the egg mixture.
- Heat Pan and Add Oil: Place a 10-inch non-stick pan over low heat and add the neutral oil. Allow the oil to heat gently without smoking to prevent burning the eggs.
- Cook First Layer: Pour about one-third of the egg mixture into the pan, spreading it evenly to cover the surface. As the edges set, use a rice paddle or spatula to lift them gently, allowing uncooked egg to flow underneath. Begin to roll the omelette when the top is nearly set but still slightly soft.
- Add More Egg Mixture and Roll: Once you have rolled the first layer to one side of the pan, pour another one-third of the egg mixture into the empty space. Tilt the pan to fill in any gaps, especially since round pans create tapered edges. Roll the omelette gently again, pulling it to the other side as it cooks.
- Finish Rolling: Repeat the process with the last third of the egg mixture. Roll the omelette fully, using a spatula and your hand if needed to hold and seal the edges together smoothly. Avoid ending the roll on the short edge to keep a neat shape.
- Rest and Slice: Remove the rolled omelette from the pan and let it rest on a cool surface for a few minutes to set. Then, slice it into 6 to 8 even pieces. If there are tapered ends due to the round pan, trim them off and enjoy immediately.
