Description

A quick and flavorful Ground Beef Lo Mein recipe featuring tender noodles tossed with savory ground beef, crisp vegetables, and a rich, tangy sauce. Perfect for a satisfying weeknight dinner that combines classic Chinese takeout flavors with simple home cooking.

Ingredients

Noodles

  • 8 ounces lo mein noodles

Beef and Vegetables

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1/2 medium onion, cut into thin strips
  • 1 medium red bell pepper, sliced into thin strips
  • 5 ounces cremini mushrooms, sliced
  • 1 cup snow peas or sugar snap peas
  • Salt and pepper, to taste

Sauce

  • 3/4 cup beef broth or water
  • 1/4 cup hoisin sauce
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon sriracha sauce
  • 1 teaspoon apple cider vinegar or rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced

Optional Garnish

  • Chopped scallions

Instructions

  1. Prepare sauce and ingredients: Whisk together the beef broth, hoisin sauce, soy sauce, sriracha, vinegar, brown sugar, cornstarch, grated fresh ginger, and minced garlic in a bowl. Prep all vegetables and set aside.
  2. Boil noodles: Bring a large pot of salted water to a boil and cook the lo mein noodles according to package directions, about 5 minutes, aiming for al dente. Drain and set aside once done.
  3. Cook ground beef: Heat a large skillet over medium-high heat and add the ground beef. Brown and cook through, about 8-10 minutes, breaking it up with a spoon. Remove beef from skillet, drain excess fat if necessary, and set aside.
  4. Sauté onion: In the same skillet, add olive oil and sauté the onion strips for about 1 minute until slightly softened.
  5. Cook vegetables: Add the bell pepper, mushrooms, and snow peas to the skillet. Stir frequently and cook for 3-4 minutes until vegetables are tender-crisp.
  6. Combine beef and sauce: Return the cooked ground beef to the skillet with the vegetables. Pour in the prepared sauce and stir well. Let the sauce bubble and thicken for about 30 seconds, then remove the skillet from heat.
  7. Toss with noodles: Add the drained noodles to the skillet and toss everything together until the noodles are evenly coated with the sauce and combined with the beef and vegetables. Season with salt and pepper to taste.
  8. Serve: Plate the lo mein and garnish with chopped scallions if desired. Serve immediately for best flavor and texture.

Notes

  • Do not overcook the noodles; aim for al dente texture to prevent sogginess.
  • You can substitute beef broth with water if preferred, but broth adds more flavor.
  • Adjust sriracha amount to control spiciness.
  • For a gluten-free version, use gluten-free soy sauce and noodles.
  • Leftovers store well in an airtight container refrigerated for up to 3 days.
