Description

This vibrant recipe features juicy grilled shrimp skewers marinated in a zesty orange-lime garlic blend and paired with a fresh, tropical mango pineapple salsa. Perfectly balanced with spicy, sweet, and tangy flavors, this dish makes a refreshing and healthy meal ideal for outdoor grilling and summer gatherings.

Ingredients

Marinade & Shrimp

  • 1/4 cup olive oil (preferably extra virgin)
  • 1/4 cup orange juice
  • 1 large lime, juiced (about 2 tablespoons)
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon honey
  • 1/2 teaspoon hot sauce
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 pound jumbo shrimp (11-15 count per pound), peeled and deveined, tail intact if desired

Mango Pineapple Salsa

  • 1 large mango, pitted and diced
  • 1 cup diced pineapple
  • 1/2 cup finely chopped red onion
  • 1 large jalapeno pepper, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1-2 tablespoons honey
  • Lime juice, to taste
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Marinade and Shrimp: In a non-reactive dish or a zipper-top bag, combine olive oil, orange juice, lime juice, minced garlic, chili powder, honey, hot sauce, salt, and black pepper to create the marinade. Add the peeled and deveined jumbo shrimp, ensuring they are fully coated. Seal and refrigerate for 1 hour to allow the flavors to meld.
  2. Preheat the Grill: Heat the grill to medium temperature, preparing it for cooking the shrimp skewers.
  3. Grill the Shrimp: Thread the marinated shrimp onto skewers if desired. Place shrimp on the preheated grill and cook for 2-3 minutes per side until the shrimp turn firm and translucent, taking care not to overcook them.
  4. Prepare the Mango Pineapple Salsa: In a small bowl, combine diced mango, diced pineapple, finely chopped red onion, jalapeno, and chopped fresh cilantro. Add 1-2 tablespoons of honey, lime juice to taste, and 1/4 teaspoon salt. Stir well to blend the flavors.
  5. Serve: Serve the grilled shrimp skewers hot alongside the fresh mango pineapple salsa for a delightful combination of smoky and sweet flavors.

Notes

  • For easy grilling, soak wooden skewers in water for 30 minutes before threading shrimp to prevent burning.
  • Adjust the amount of jalapeno and hot sauce according to your spice preference.
  • If you don’t have a grill, shrimp can be cooked on a stovetop grill pan or broiled in the oven.
  • Serving with warm tortillas or rice makes for a more filling meal.
  • Use fresh lime juice for the best flavor impact in both marinade and salsa.
