Description

A fresh and vibrant Grilled Peach and Burrata Salad featuring juicy grilled peaches, creamy burrata cheese, mixed greens, and a zesty herbed lemon vinaigrette, finished with pistachios and a drizzle of balsamic glaze. Perfect as a light summer lunch or a delicious starter.


Ingredients

For the Salad

  • 4 peaches or nectarines
  • ¼ tsp olive oil (for brushing)
  • ¼ tsp salt & pepper
  • 1 ball burrata
  • ¼ cup pistachios (chopped walnuts or almonds can also be used)
  • ⅓ cup tomatoes, chopped
  • 6-8 cups mixed greens
  • 1 Tbsp balsamic glaze
  • Extra honey to drizzle over peaches as needed

For the Herbed Lemon Vinaigrette

  • ¼ cup olive oil
  • 1 Tbsp red wine vinegar
  • 1 tsp honey (plus more for drizzling on peaches)
  • 1 tsp lemon zest
  • ¼ cup fresh lemon juice (about one lemon)
  • 1 Tbsp fresh basil, chopped
  • ½ Tbsp fresh dill, chopped
  • ¼ tsp fresh oregano, chopped
  • 2 garlic cloves, minced


Instructions

  1. Prepare Peaches: Slice the peaches or nectarines in half and remove the pits. Brush each half with olive oil and sprinkle with salt and pepper. Preheat the grill to medium heat, ensuring the grates are clean to prevent sticking.
  2. Grill Peaches: Place the peaches cut side down on the grill grates. Grill without moving for 2-3 minutes until char marks form. Flip and grill the other side for another 2-3 minutes. Remove the peaches carefully with a grill-safe spatula and let them cool on a plate. Drizzle honey over the warm peaches to enhance the sweetness.
  3. Make Vinaigrette: Finely chop the fresh basil, dill, and oregano. In a small bowl, whisk together olive oil, red wine vinegar, honey, lemon zest, lemon juice, minced garlic, and the chopped herbs until well combined.
  4. Assemble Salad: Once the peaches are cool enough to handle, slice them. Slice the tomatoes as well. In a large bowl or serving plate, create a bed with the mixed greens. Arrange the sliced peaches and tomatoes on top. Tear the burrata ball into pieces and distribute evenly over the salad. Drizzle with the herbed lemon vinaigrette, extra honey if desired, and garnish with additional chopped herbs. Finish with a generous drizzle of balsamic glaze before serving.

Notes

  • You can substitute nectarines for peaches depending on availability.
  • Use chopped walnuts or almonds if pistachios are unavailable.
  • Grilling can also be done on a grill pan over the stovetop if an outdoor grill is unavailable.
