Description

This Grilled Honey Mustard Chicken Tenders recipe features tender chicken marinated in a flavorful blend of Dijon mustard, honey, fresh rosemary, and lemon juice, then grilled to juicy perfection. The combination of sweet and tangy marinade enhances the chicken’s natural flavor, making it a perfect protein option for a quick and delicious meal. Ideal for grilling season, this dish serves 4 and includes a reserved mustard glaze for finishing touch.

Ingredients

Marinade

  • 1/4 cup coarse ground Dijon mustard
  • 1/2 shallot, diced
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh rosemary
  • 1 tablespoon freshly squeezed lemon juice
  • Kosher salt, 1 teaspoon
  • Freshly ground black pepper, 1/2 teaspoon

Chicken

  • 1 1/2 pounds chicken tenderloins
  • 1 tablespoon canola oil
  • Additional kosher salt and freshly ground black pepper, to taste

Instructions

  1. Prepare Marinade: In a medium bowl, whisk together the coarse ground Dijon mustard, diced shallot, honey, olive oil, chopped fresh rosemary, freshly squeezed lemon juice, 1 teaspoon kosher salt, and 1/2 teaspoon freshly ground black pepper. Set aside half of this mixture and refrigerate it for later use as a finishing glaze.
  2. Marinate Chicken: Place the chicken tenderloins in a large gallon-size Ziploc bag or bowl and pour the remaining Dijon mustard marinade over them. Seal the bag or cover the bowl and let the chicken marinate in the refrigerator for at least 2 hours, ideally up to 8 hours for maximum flavor, turning occasionally to ensure even coating.
  3. Preheat Grill: When ready to cook, preheat your grill to medium heat to prepare for grilling the chicken tenders.
  4. Prepare Chicken for Grilling: Remove the chicken from the marinade and drain excess liquid. Brush each tenderloin with canola oil and season with additional kosher salt and freshly ground black pepper to taste.
  5. Grill Chicken: Place the chicken tenders on the preheated grill. Cook them for about 8 minutes, turning occasionally, until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked through.
  6. Apply Reserved Glaze: During the last 1-2 minutes of grilling, brush the reserved Dijon mustard mixture over the chicken tenders to add extra flavor and create a glossy finish.
  7. Serve: Remove the chicken from the grill and serve immediately, enjoying the sweet and tangy grilled honey mustard chicken tenders fresh off the grill.

Notes

  • Marinating the chicken overnight will deepen the flavors, but a minimum of 2 hours is sufficient.
  • Use a meat thermometer to ensure chicken reaches the safe internal temperature of 165°F to prevent undercooking.
  • Adjust salt and pepper seasoning according to personal taste preferences.
  • Fresh rosemary can be substituted with dried rosemary in smaller amounts but fresh is recommended for best flavor.
  • Serve with grilled vegetables or a fresh salad for a complete meal.
