Ground Beef Filling

  • 1 lb lean ground beef
  • ⅓ cup red onion, diced
  • Leftover taco seasoning (from seasoning mix above)
  • 1 tbsp tomato paste

  • Large burrito size flour tortillas

Instructions

  1. Mix Seasonings: Combine garlic powder, chili powder, paprika, cumin, oregano, salt, and pepper in a small bowl to create a taco seasoning mix that will be used both in the rice and the beef.
  2. Prepare the Rice: Rinse the rice thoroughly. In a medium pot, add the rinsed rice, 2 cups water, fire roasted tomatoes, and 1 teaspoon of the taco seasoning mix. Stir well and bring to a simmer over medium-low heat.
  3. Simmer the Rice: Cover and let the rice cook on low heat for 18-20 minutes, stirring occasionally to prevent burning. Add an extra 1/4 cup water if needed until the rice is tender and liquid is absorbed.

  9. Roll Burritos: Fold the sides of the tortilla over the filling, then roll tightly from the bottom to encase the filling securely.
  10. Grill Burritos with Cheese: Heat a skillet or griddle on medium heat. Sprinkle about 1/4 cup shredded cheese directly on the skillet. Place the burrito seam-side down on the cheese. Cook for 3-4 minutes until the cheese beneath is golden and crispy, then carefully flip and cook the other side for another 3-4 minutes until cheese is melted and burrito is heated through.
