This classic Green Goddess Dressing is a creamy, herbaceous sauce made with fresh parsley, basil, chives, and tarragon combined with mayonnaise and sour cream. Perfect as a salad dressing, dip, or drizzle, it offers a vibrant, tangy, and savory flavor that brightens any dish.

  • ½ cup mayonnaise, best quality such as Hellmann’s or Duke’s
  • ½ cup sour cream
  • 1½ tablespoons fresh lemon juice (from 1 lemon)
  • 1 cup roughly chopped fresh parsley
  • ½ cup roughly chopped fresh basil
  • ¼ cup roughly chopped fresh chives
  • 1½ tablespoons roughly chopped fresh tarragon
  • 1 teaspoon anchovy paste (or two mashed anchovies)
  • 1 small clove garlic, roughly chopped
  • Heaping ¼ teaspoon salt
  • Heaping ¼ teaspoon freshly ground black pepper


Instructions

  1. Prepare the ingredients. Gather all fresh herbs and roughly chop them. Measure out the mayonnaise, sour cream, lemon juice, anchovy paste or mashed anchovies, garlic, salt, and pepper for easy assembly.
  2. Process the dressing. Combine all ingredients in the bowl of a food processor. Blend until the herbs are finely chopped and the mixture is smooth, about 30 seconds.
  3. Adjust seasoning. Taste the dressing and add more salt, pepper, or lemon juice as needed to balance the flavors.
  4. Serve or chill. Serve immediately for a thinner, drizzleable dressing. For a thicker dip consistency, chill in the refrigerator for a few hours.
  5. Recondition if needed. If chilled, allow the dressing to sit at room temperature for about an hour and stir well to restore a drizzleable texture before serving.
  6. Store properly. Keep the dressing in a covered container in the refrigerator for 4 to 5 days.

  • Adjust the amount of lemon juice to taste for more brightness.
  • If you don’t have anchovy paste, two mashed anchovies work perfectly as a substitute.
