Ingredients

Bread and Cheese

  • 1 10-12 inch French baguette
  • ½ cup mozzarella, sliced (3-5 pieces)

Produce

  • 2 roma tomatoes, thinly sliced
  • ½ cup arugula
  • ½ Tbsp shallots, finely chopped
  • ¼ cup fresh basil
  • 2 Tbsp fresh parsley
  • 2 Tbsp fresh mint
  • 1 Tbsp grated Parmesan (optional, for garnish)

Condiments and Seasonings

  • ⅓ cup plain Greek yogurt
  • 3 Tbsp fresh lemon juice
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp balsamic glaze (optional, for garnish)
  • Oil spray or drizzle (for spritzing baguette)


Instructions

  1. Preheat and prepare dressing: Preheat your oven to 400ºF (204ºC). In a blender or food processor, combine the Greek yogurt, fresh lemon juice, salt, pepper, shallots, basil, parsley, and mint. Blend until smooth to create the Green Goddess dressing. Taste and adjust lemon juice or seasonings as desired.
  2. Toast the baguette: Lightly spritz the cut sides of the baguette with oil and place on a baking sheet. Toast in the preheated oven for 3-4 minutes until just beginning to brown and crisp.
  3. Assemble the melts: Spread the prepared Green Goddess dressing on the toasted baguette slices. Layer sliced mozzarella and roma tomatoes on top of the dressing.
  4. Melt and brown: Return the assembled baguette slices to the oven and toast for an additional 5-10 minutes. Bake until the mozzarella is melted and bubbly, and the bread is nicely browned and crispy but not burnt.
  5. Add fresh toppings and serve: Remove from oven and immediately top with fresh arugula. Optionally, sprinkle with grated Parmesan and drizzle with balsamic glaze and extra Green Goddess dressing. Serve warm and enjoy!
