Description

A quick and flavorful green beans and mushrooms sauté that combines tender green beans with savory brown mushrooms and aromatic garlic and onions. This simple skillet dish is perfect as a healthy side or light vegetarian main, delivering a delightful balance of texture and umami in just 25 minutes.

Ingredients

Vegetables

  • 1 pound green beans
  • ½ pound brown mushrooms, sliced ½ inch thick
  • ½ cup diced yellow onions, ¼ inch dice
  • 1 tablespoon minced garlic

Seasonings & Fats

  • 1 tablespoon olive oil
  • ¼ cup water
  • 1 teaspoon soy sauce
  • 1 teaspoon kosher salt, divided
  • ¼ teaspoon black pepper
  • 1 tablespoon unsalted butter

Instructions

  1. Prepare Green Beans: Wash the green beans thoroughly under cool running water and drain completely. Trim off any string ends from the beans and cut them in half if they are very long. Set aside for cooking.
  2. Cook the Mushrooms: Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and ½ teaspoon of kosher salt. Sauté the mushrooms until they become tender and lightly browned, about 2 to 3 minutes.
  3. Cook the Aromatics: Add the minced garlic to the skillet with the mushrooms and cook until fragrant, about 30 seconds. Then add the diced onions and sauté until they are translucent and softened, approximately 1 to 2 minutes.
  4. Cook Green Beans: Add the prepared green beans, ¼ cup water, soy sauce, the remaining ½ teaspoon salt, and black pepper to the pan. Stir well to combine. Increase the heat to medium-high, cover the skillet, and cook until the green beans are tender and bright green, about 3 to 4 minutes. If the beans are still too crisp, add an additional ¼ cup of water, cover, and steam until crisp-tender. Remove the lid and stir until all the water evaporates, about 1 minute.
  5. Add the Butter: Turn off the heat and stir in the tablespoon of unsalted butter until it is completely melted and incorporated, coating the vegetables.
  6. To Serve: Adjust seasoning by tasting and adding additional salt and pepper if desired. Serve the green beans and mushrooms hot as a delightful side dish or a light vegetarian entrée.

Notes

  • Use fresh green beans for best texture and flavor.
  • Slicing mushrooms evenly ensures even cooking.
  • You can substitute soy sauce with tamari for gluten-free option.
  • Adjust salt and pepper according to your taste preferences.
  • This dish pairs well with rice, quinoa, or as a side to grilled meats or tofu.
  • For a richer flavor, you could add a splash of white wine during cooking.
