Ingredients

Dressing Ingredients

  • 1/2 cup plain Greek yogurt
  • 1/4 cup crumbled feta cheese
  • 10 to 12 fresh mint leaves
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red or white wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Pinch black pepper

Lettuce Wrap Ingredients

  • 1 1/2 pounds lean ground turkey or chicken
  • Salt and pepper, to taste
  • 1 to 2 teaspoons minced fresh garlic
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • Bibb or romaine lettuce leaves
  • Chopped cucumbers, for topping
  • Diced tomatoes, for topping

Instructions

  1. Make the dressing: Add all the dressing ingredients—Greek yogurt, crumbled feta, fresh mint leaves, olive oil, lemon juice, wine vinegar, dried oregano, garlic powder, salt, and black pepper—to a blender. Puree until smooth. The dressing will be thick; if you prefer a thinner consistency, gradually add water or more olive oil and blend until you reach your desired texture. You can prepare this dressing up to several days ahead and store it in the fridge.
  2. Cook the ground meat: Heat a 12-inch nonstick skillet over medium heat. Add the ground turkey or chicken, seasoning lightly with salt and pepper. Cook, breaking the meat into small pieces with a spatula as it cooks, until it’s no longer pink inside. Drain any excess grease from the skillet to keep the wraps light and healthy.
  3. Season the meat: Stir the minced fresh garlic, dried oregano, fresh lemon juice, and red wine vinegar into the cooked meat. Continue cooking for 2 to 3 minutes to let the flavors meld together. Taste and adjust seasoning with additional salt and pepper if needed. Remove the pan from heat.
  4. Assemble the lettuce wraps: Take Bibb or romaine lettuce leaves and spoon a portion of the seasoned ground meat into each leaf. Top with chopped cucumbers, diced tomatoes, and a generous spoonful of the prepared Greek yogurt dressing. Serve immediately for a fresh and healthy meal.
