Ingredients
For the Chicken:
- 1.5 lbs. boneless skinless chicken breast, cut into 1″ cubes
- 1 tablespoon lemon juice
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1 teaspoon garlic powder
- Salt & pepper to season
- 1 tablespoon grape seed oil
For the Tzatziki Sauce:
- ½ cup plain Greek yogurt
- ¼ cup grated cucumber
- 1 tablespoon lemon juice
- ½ teaspoon dry dill
- ½ teaspoon garlic powder
- Salt to taste
For Assembly:
- ½ cup halved cherry tomatoes
- ¾ cup sliced cucumber
- ⅓ cup thinly sliced red onion
- 12 lettuce cups
Instructions
- Marinate the Chicken: In a large bowl, combine the chicken cubes with lemon juice, oregano, parsley, garlic powder, salt, and pepper. Toss well with a spoon until the chicken is evenly coated with the marinade.
- Cook the Chicken: Heat a large skillet over medium-high heat. Add the grape seed oil, then add the seasoned chicken pieces. Cook for 2-4 minutes on each side or until the chicken is cooked through and no longer pink inside. Remove the chicken from the skillet and let it rest.
- Prepare the Tzatziki Sauce: While the chicken cooks, mix the Greek yogurt, grated cucumber, lemon juice, dry dill, garlic powder, and salt in a small bowl. Stir thoroughly to combine and set aside.
- Assemble the Lettuce Wraps: Take one lettuce cup and add 3-4 pieces of cooked chicken. Top with halved cherry tomatoes, sliced cucumber, thinly sliced red onion, and a dollop of the prepared tzatziki sauce. Repeat for all lettuce cups.
- Serve: Arrange the lettuce wraps on a platter and serve immediately for a refreshing and flavorful meal.
Notes
- For extra flavor, marinate the chicken for 30 minutes to an hour before cooking.
- You can substitute grape seed oil with olive oil if preferred.
- Make sure to squeeze excess water out of the grated cucumber for the tzatziki to avoid a watery sauce.
- These wraps can be enjoyed as a low-carb or gluten-free meal option.
- Leftover chicken can be refrigerated for up to 3 days and reused in salads or wraps.
