  • 1¼ teaspoons cinnamon, divided

Wet Ingredients

  • 2 sticks (1 cup) unsalted butter, melted and slightly cooled (or 1 cup vegetable oil)
  • 1 cup plus 1 tablespoon sugar, divided
  • 2 teaspoons vanilla extract
  • ¼ teaspoon almond extract
  • 3 large eggs

  • 1 cup semi-sweet chocolate chips
  • ¾ cup coarsely chopped pecans, walnuts, or slivered almonds (optional)


Instructions

  1. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, salt, 1 teaspoon of cinnamon, and ground nutmeg until well combined.
  2. Combine Wet Ingredients: In the bowl of an electric mixer, beat the melted and cooled butter with 1 cup of sugar, vanilla extract, and almond extract on medium speed until combined. Add eggs and continue beating for 2 to 3 minutes until the mixture thickens and becomes pale yellow.
  3. Incorporate Dry Ingredients: Add the dry mixture to the wet ingredients and mix on low speed just until combined. Fold in chocolate chips and nuts, if using. Cover the bowl with plastic wrap and refrigerate the dough for 1 to 2 hours to firm up.
  4. Preheat Oven and Prepare Sheets: Preheat the oven to 350°F and place two racks in the middle positions. Line two baking sheets with parchment paper. Lightly flour a clean surface.
