Description

These Gluten-Free Vegan Cranberry Bliss Bars are allergy-free, delightfully chewy, and packed with festive cranberries. Made with gluten-free baking flour and non-dairy milk, they offer a perfect balance of sweet and tart flavors without compromising on texture. Topped with a luscious vegan white chocolate drizzle, these bars are an ideal treat for holiday gatherings or everyday indulgence.

Ingredients

Dry Ingredients

  • 2 Cups Gluten-Free Baking Flour
  • 3/4 Cup Erythritol (or preferred granulated sweetener)
  • 1 Tsp Baking Powder

Wet Ingredients

  • 1 Stick MELT Vegan Butter (softened)
  • 3/4 Cup Unsweetened Non-Dairy Milk
  • 1 Tsp Pure Madagascar Bourbon Vanilla Extract
  • 1/2 Tsp Pure Orange Extract

Add-ins & Toppings

  • 1 1/2 Cups Dried Cranberries
  • 1 Cup Vegan/Allergy-Free White Chocolate (to melt)

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) to ensure it’s properly heated when your bars are ready to bake.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the gluten-free baking flour, baking powder, and erythritol. Stir them well so they are evenly distributed.
  3. Add Wet Ingredients and Cranberries: Add the softened vegan butter, dried cranberries, unsweetened non-dairy milk, vanilla extract, and orange extract to the dry mixture. Mix thoroughly until you have a smooth, homogeneous batter.
  4. Prepare Baking Pan: Grease your individual brownie square baking pan to prevent sticking. Spoon the batter evenly into 9 cavities, filling each one.
  5. Bake Bars: Place the pan in the preheated oven and bake for 20 minutes. Once done, remove from the oven and allow the bars to cool completely on a wire rack for the best texture.
  6. Melt White Chocolate: Break the vegan white chocolate into pieces and put them in a microwave-safe bowl. Heat in 15-20 second increments, stirring in between, until fully melted and smooth.
  7. Decorate Bars: Transfer the melted white chocolate into a pastry bag or decorating gun equipped with a fine tip. Drizzle the white chocolate over the cooled bars in a zigzag pattern for an elegant finish.

Notes

  • Ensure the vegan butter is softened to room temperature for easier mixing.
  • The drying and cooling step is crucial before drizzling the chocolate to avoid melting.
  • You may substitute erythritol with any other granulated sweetener of your preference.
  • Use a gluten-free certified baking flour blend for best results and allergen safety.
  • If you don’t have a specialty brownie square pan, a regular baking pan will work; just slice the bars after baking.
