Vegan-friendly and easy to prepare, they’re mixed by hand and baked to golden perfection.
Ingredients
Cookie Dough
- 160g (2/3 cup) tahini, hulled or unhulled
- 100-125ml (5-6 tbsp) maple syrup
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- Pinch of fine salt
Mix-ins
- 100-200g chopped chocolate or chocolate chips (vegan if necessary)
- 1-2 cups seeds and mix ins (such as pepitas, hemp seeds, puffed quinoa)
Instructions
- Preheat the oven: Preheat your oven to 160°C (320°F) and line a baking tray with baking paper to ensure cookies don’t stick and bake evenly.
- Mix the dough: In a small mixing bowl, combine tahini, maple syrup, baking powder, baking soda, and a pinch of salt. Mix vigorously for 2-3 minutes or more until the batter reaches the consistency of a slightly soft cookie dough that holds on a spoon and can be formed into balls by hand. Take occasional breaks if needed but continue mixing until the right texture is achieved.
- Add mix-ins: Stir in your chosen mix-ins like chopped chocolate, seeds, and puffed quinoa until evenly distributed throughout the batter.
- Shape and bake: Using a spoon, drop dollops of dough onto the prepared baking tray, spacing them well to allow for spreading. Bake in the preheated oven for 15-20 minutes, or until the cookies turn golden and crisp around the edges.
- Cool the cookies: Let the cookies cool mostly on the baking tray before transferring them. They will firm up as they cool, achieving the ideal texture.
- Storage: Store the cookies in an airtight container at room temperature or in the fridge for several days. Note that they may lose some crispness over time but will remain delicious.
Notes
- Tahini can be hulled or unhulled depending on texture preference; hulled tahini is smoother.
- Adjust the amount of maple syrup to control sweetness and dough consistency.
- The baking soda helps with slight leavening and texture, but can be omitted if unavailable.
- Mix-ins are flexible; you can customize with your favorite seeds and vegan chocolate to suit dietary needs.
- For extra crunch, consider chilling the dough slightly before baking.
- These cookies are naturally gluten-free and vegan if using vegan chocolate and pure maple syrup.
