Instructions

  1. Heat the pan: Place a large pan or Dutch oven over medium heat and add the butter. Allow it to melt completely.
  2. Add onion: Add the diced onion to the melted butter in the pan.
  3. Sauté onion: Cook the onion for 5-7 minutes, stirring occasionally, until softened and slightly translucent.
  4. Add garlic and beef: Stir in the minced garlic, then add the ground beef to the pan.
  5. Cook beef: Brown the ground beef until it’s mostly cooked through but still slightly pink, as it will continue cooking later.
  6. Stir in tomato paste: Add the tomato paste to the beef mixture and cook for 1-2 minutes to develop flavor.
  7. Add remaining ingredients: Pour in the low sodium beef broth, almond milk, gluten free pasta, salt, black pepper, chili powder, and paprika. Stir well to combine.
  8. Boil and simmer: Bring the mixture to a low boil, then reduce the heat to low. Cover and simmer for about 10 minutes, stirring every couple of minutes to prevent sticking and ensure even cooking until the pasta is tender.
  9. Add cheese and serve: Remove the pan from heat and stir in the shredded cheddar cheese until melted and creamy. Garnish with chopped chives and red pepper flakes before serving. Enjoy!
