Description

These Gluten Free Dirty Chai Cookies offer a delightful blend of spicy chai flavors and bold espresso in a tender, chewy cookie. Perfect for small batches, this recipe delivers 6 flavorful treats with a gluten free twist. The dough is chilled for optimal texture, then rolled in a chai-spiced sugar coating before baking to golden perfection. Ideal for chai lovers seeking a unique and cozy cookie experience.

Ingredients

Cookie Dough

  • 40 grams unsalted butter
  • 1 1/2 teaspoons chai spice (see note)
  • 1/2 – 1 teaspoon Instant Espresso powder
  • 65 grams gluten free flour
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 40 grams light brown sugar
  • 20 grams granulated sugar
  • 1 large egg yolk (egg yolk ONLY!)
  • 1 teaspoon vanilla extract

Chai-Spiced Sugar Coating

  • 20 grams granulated sugar
  • 1/2 teaspoon chai spice
  • 1/4 – 1/2 teaspoon Instant Espresso powder

Instructions

  1. Prepare the butter mixture: Melt the unsalted butter carefully in a small saucepan or microwave-safe bowl, making sure not to brown it to avoid overpowering flavors. Transfer the melted butter to a mixing bowl.
  2. Add spices: Stir in the 1 1/2 teaspoons chai spice and 1/2 to 1 teaspoon instant espresso powder into the warm melted butter to infuse the flavors.
  3. Mix dry ingredients: In a separate small bowl, combine the gluten free flour, baking soda, and kosher salt, mixing well.
  4. Create sugar and butter base: Once the butter mixture has cooled slightly but remains liquid, stir in the light brown sugar and granulated sugar until the mixture takes on a wet sand-like texture.
  5. Add egg yolk and vanilla: Incorporate the room temperature egg yolk and vanilla extract, stirring until the mixture is smooth and glossy.
  6. Combine dry and wet ingredients: Fold in the dry flour mixture into the wet mixture. The dough may look dry or crumbly at first but continue mixing until it comes together fully.
  7. Chill the dough: Cover and refrigerate the dough for at least 20 minutes to firm it up for easier handling and better cookie texture.
  8. Preheat oven and prepare baking sheet: Set oven to 350°F (177°C) and line a baking sheet with parchment paper.
  9. Make chai-spiced sugar coating: In a small bowl, combine the granulated sugar, chai spice, and instant espresso powder for the coating, breaking up any clumps for even coating.
  10. Portion dough: Using a medium cookie scoop (about 1.5 to 2 tablespoons), scoop 6 equal portions of the chilled dough.
  11. Shape and coat cookies: Roll each dough portion between your hands into a ball, then roll it thoroughly in the chai-spiced sugar mixture to coat evenly.
  12. Arrange on baking sheet: Place the coated dough balls on the prepared baking sheet, spacing them apart. Optionally, sprinkle additional chai-spiced sugar on top of each cookie.
  13. Bake: Bake for 9 to 10 minutes until the cookies are puffed and edges are just set but not browned.
  14. Shape cookies: Immediately upon removal from the oven, use a round cookie cutter slightly larger than the cookies to gently nudge their edges into a neat round shape while still warm.
  15. Cool: Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Use only the egg yolk for richer texture and chewiness in the cookies.
  • Be careful not to brown the butter, as it can overpower the chai and espresso flavors.
  • Adjust the amount of instant espresso powder to your preferred coffee intensity.
  • Chilling the dough is essential to help the cookies hold their shape and flavor balance.
  • Gluten free flour blend should be a 1-to-1 baking blend suitable for cookies.
