Description

A quick and healthy gluten-free chicken stir fry featuring tender chicken breast and fresh vegetables sautéed in a flavorful avocado oil base, infused with garlic, ginger, and a touch of honey and umami sauce for a perfect weeknight meal.

Ingredients

Protein

  • 1 lb chicken breast

Vegetables

  • 3 cloves garlic
  • 1 inch ginger knob
  • 1 crown broccoli
  • 1 zucchini
  • 1/2 red pepper
  • 1/2 sweet onion

Oils and Sauces

  • 1 tbsp avocado oil
  • 1 tbsp honey
  • 2 tbsp Kikkoman Umami Joy Sauce
  • dash salt

Instructions

  1. Gather Ingredients: Collect all necessary ingredients including chicken, vegetables, oils, and sauces to ensure a smooth cooking process.
  2. Chop Vegetables: Prepare the broccoli crown, zucchini, red pepper, and sweet onion by chopping them into bite-sized pieces suitable for stir frying.
  3. Sauté Garlic: Heat 1 tablespoon of avocado oil in a pan over medium heat. Add minced garlic cloves and sauté until lightly browned to release their flavor.
  4. Cook Chicken: Cut the chicken breast into cubes and add them to the pan with the garlic. Season with a dash of salt and cook for about 10 minutes until the chicken is browned and cooked through.
  5. Add Vegetables: Stir in the chopped vegetables and continue cooking, stirring occasionally until the vegetables are lightly browned and tender-crisp, and the chicken is fully cooked.
  6. Finish with Sauce: Pour in 1 tablespoon honey and 2 tablespoons of Kikkoman Umami Joy Sauce. Stir to combine and cook for an additional 2 minutes to blend the flavors. Serve immediately, optionally on top of cooked rice for a complete meal.

Notes

  • Use fresh garlic and ginger for the best flavor.
  • Customize vegetables based on availability, such as adding carrots or snap peas.
  • This stir fry pairs wonderfully with steamed rice or quinoa.
  • To keep it low-sodium, reduce the amount of Kikkoman Umami Joy Sauce or opt for a low-sodium version.
