Ingredients

Apples

  • 2 red/pink apples (Honeycrisp or Pink Lady recommended)
  • 4 tablespoons sugar (divided)

Pastry

  • 1 sheet puff pastry (half of a 17.25-ounce package, such as Pepperidge Farm)
  • 1 tablespoon all-purpose flour (for dusting)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon pure maple syrup


Instructions

  1. Thaw and prepare muffin tin: Thaw the puff pastry at room temperature for 30 minutes, then refrigerate until ready to use. Spray a 6-cup muffin tin with non-stick spray and set aside.
  2. Slice and sweeten apples: Cut apples in half, core them, and slice into very thin slices with peel on to maintain color. Place slices in a microwave-safe bowl, sprinkle with 2 tablespoons sugar, and toss gently to coat.
  3. Microwave and drain apples: Microwave apples on high power for 90 seconds, then allow them to sit for 10 minutes. Transfer to a strainer over a bowl to drain juices for 10 minutes, shaking gently. Reserve the drained apple juice.
  4. Roll out puff pastry: Remove puff pastry from fridge and place on a floured surface. Roll it into a rectangle approximately 12 x 9 inches (30 x 22 cm). Cut into 6 strips, each about 2 x 9 inches (5 x 22 cm).
  5. Prepare cinnamon sugar: Combine remaining 2 tablespoons sugar with cinnamon. Sprinkle each dough strip generously with about a teaspoon of the mixture.
  6. Assemble roses: Arrange apple slices along the top edge of each strip, overlapping slices so the peel side extends beyond the edge to create a rose petal effect.
  7. Roll and place in muffin tin: Fold up the bottom edge of the dough to meet the top of the apple slices. Roll the strip from one end tightly like a snail, seal the edge by pressing with fingers, and place each rose into a muffin cup. Repeat for all strips.
  8. Chill before baking: Place the assembled muffin tin in the refrigerator while preheating oven to 375°F (190°C).
  9. Bake the roses: Bake for 40 minutes until the roses are light golden brown. Brush tops with the prepared maple syrup glaze, then bake for an additional 5-10 minutes until golden. Cover loosely with foil after 25-30 minutes if apples brown too quickly.
  10. Prepare glaze: While baking, mix maple syrup into the reserved apple juice and microwave for 90 seconds. Set aside for brushing after initial bake.
