Ingredients
Cauliflower and Seasonings
- 1 medium head cauliflower, cut into florets (about 8 cups)
- 3 Tbsp. extra-virgin olive oil
- 1 1/2 tsp. paprika
- 3/4 tsp. kosher salt
- 1/2 tsp. cracked black pepper
Toppings and Garnishes
- 3 garlic cloves, minced
- 2 to 3 Tbsp. grated Parmesan cheese
- Juice of 1/2 lemon
- 2 Tbsp. finely chopped fresh parsley
Instructions
- Preheat Oven and Prepare Cauliflower: Place a large rimmed baking sheet on the center rack of the oven and preheat the oven to 450ºF (232ºC). Meanwhile, cut the cauliflower into small florets and transfer them to a large bowl. Toss the florets with olive oil, paprika, kosher salt, and cracked black pepper to evenly coat.
- Roast the Cauliflower: Spread the seasoned cauliflower florets in a single layer on the preheated baking sheet, ensuring they are not overcrowded to allow even roasting. Roast in the oven for 20 to 25 minutes, tossing once halfway through, until the florets are tender and lightly charred around the edges.
- Add Garlic and Parmesan, Then Continue Roasting: Sprinkle the minced garlic and grated Parmesan cheese evenly over the roasted cauliflower. Return the baking sheet to the oven and roast for an additional 5 minutes to lightly toast the cheese and garlic, enhancing their flavors.
- Finish and Serve: Remove the cauliflower from the oven. Spritz the lemon juice over the hot roasted cauliflower and garnish with finely chopped fresh parsley. Toss gently to combine all flavors before serving warm.
Notes
- For even roasting, avoid overcrowding the cauliflower florets on the baking sheet.
- Use freshly grated Parmesan cheese for the best flavor and melting quality.
- Adjust the amount of garlic and paprika to suit your taste preferences.
- This dish can be served as a side for meats, vegetarian meals, or as a healthy snack.
- To make it vegan, omit the Parmesan or substitute with a vegan cheese alternative.
