Ingredients
Main Ingredients
- 1 lb ground beef (lean recommended)
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 2 cloves garlic, minced
- ¼ cup chopped fresh parsley (or 1 tbsp dried)
- ¼ cup breadcrumbs (panko optional for crunch)
- 1 large egg
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp onion powder
- ½ tsp paprika (or smoked paprika for depth)
Additional Ingredients
- Cooking spray or olive oil (for greasing)
- Optional: refrigerated biscuit dough (if making with biscuits)
- Optional: 2–3 tbsp cream cheese (if making with cream cheese)
Instructions
- Preheat and prepare: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil to prevent sticking.
- Combine ingredients: In a large bowl, mix together the ground beef, minced garlic, chopped parsley, breadcrumbs, egg, salt, black pepper, onion powder, and paprika. Stir just until evenly combined to avoid overworking the meat and keep it tender.
- Form the bombs with cheese: Take about 2 tablespoons of the beef mixture and flatten it in your palm. Place a pinch of shredded mozzarella cheese in the center. If you’re using cream cheese, mix it with mozzarella before adding. Then fold the beef mixture over the cheese, sealing it completely and rolling into a smooth ball.
- Coat with parmesan: Roll each cheese-filled beef ball in the grated parmesan cheese to coat the outside evenly. This adds flavor and forms a delicious crust.
- Arrange and bake: Place the coated balls on the prepared baking sheet, spacing them evenly so they bake thoroughly. Bake for 18–20 minutes or until golden brown, fully cooked through, and the cheese inside is melted. If using refrigerated biscuit dough, follow the biscuit package instructions for baking.
- Garnish and serve: Once baked, garnish with extra fresh parsley and serve hot. These bombs are delicious on their own or paired with your favorite dipping sauces.
Notes
- Don’t overmix the beef to keep the bombs tender.
- Chill assembled bombs for 10–15 minutes before baking to help them hold their shape and prevent cheese from leaking.
- Use freshly grated parmesan for better adhesion and richer flavor compared to pre-shredded cheese.
- Add a pinch of red pepper flakes for a spicy kick or sprinkle sesame seeds on top for added crunch.
- To make ahead: assemble the bombs, cover, and refrigerate for up to 1 day before baking.
- To freeze: allow bombs to cool completely, store in an airtight container, and freeze for up to 1 month. Reheat in a 350°F oven until warmed through.
