Description

Crispy garlic herb butter roasted chicken that is juicy, tender, and packed with aromatic flavors. This recipe takes only 20 minutes to prep and delivers a beautifully golden and flavorful roast perfect for a satisfying main course.

Ingredients

Chicken and Butter Mixture

  • 4-5 pound whole chicken, room temperature with giblets and neck removed from the cavity
  • 1/4 cup unsalted butter, melted
  • 4 tablespoons olive oil
  • 1 lemon, zested first and then juiced
  • Salt and freshly ground pepper, to taste

Herb Butter Rub

  • 4 tablespoons butter, room temperature
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 tablespoon smoked paprika (optional, for a darker color when roasting)
  • 6 cloves garlic, minced

Stuffing

  • 1 head garlic, roughly peeled and cut in half horizontally through the middle
  • 6 sprigs fresh rosemary, tied together
  • 3 sprigs fresh thyme
  • 1 lemon, quartered

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 425°F (220°C). Lightly coat a roasting pan with olive oil and set it aside for later use.
  2. Clean Chicken: Rinse the whole chicken under cold running water, removing any excess fat or leftover feathers. Pat dry completely with paper towels to ensure the skin crisps well.
  3. Apply Butter and Oil Mixture: In a small bowl, mix the olive oil, melted butter, and lemon juice. Place the chicken on a cutting board or directly in the roasting pan, then pour this mixture over the chicken. Gently rub it under the skin and inside the cavity with your hands for maximum flavor infusion.
  4. Season and Add Parsley: Liberally season the inside and outside of the chicken with salt and freshly ground pepper. Sprinkle the chopped parsley evenly over the chicken surface.
  5. Prepare Herb Butter Rub: In a medium bowl, combine the room temperature butter with chopped rosemary, thyme, lemon zest, minced garlic, and smoked paprika if using. Stir until well blended.
  6. Rub Chicken with Herb Butter: Rub the herb butter mixture all over the chicken, making sure to get some under the skin to enhance flavor and moisture.
  7. Stuff the Chicken: Stuff the chicken cavity with the halved garlic head, rosemary sprigs, thyme sprigs, and quartered lemon. Tie the chicken legs together tightly with kitchen string to hold the stuffing and ensure even cooking.
  8. Roast the Chicken: Place the chicken breast-side up in the prepared roasting pan. Roast in the oven for 1 hour and 15 to 25 minutes. Halfway through cooking, baste the chicken with the pan juices to keep it moist. Continue roasting until the juices run clear when pierced with a skewer.
  9. Broil for Finish: After roasting, baste the chicken once more, then switch the oven to broil. Broil for 2-3 minutes until the skin is golden and crisp, watching carefully to avoid burning.
  10. Rest and Serve: Remove the chicken from the oven and let it rest for 10-15 minutes before carving. Drizzle with the pan juices for extra flavor and serve with fresh lemon wedges on the side.

Notes

  • Ensure the chicken is at room temperature before roasting for even cooking.
  • Rubbing butter mixture under the skin helps keep the meat moist and flavorful.
  • Basting half-way and at the end improves juiciness and skin crispness.
  • Letting the chicken rest after cooking allows juices to redistribute, making the meat tender.
  • Using smoked paprika is optional but adds a lovely color and subtle smoky flavor.
  • Tie the legs to maintain shape and ensure even roasting.
