Description

This Garlic Grilled Shrimp recipe features succulent shrimp marinated in a flavorful blend of olive oil, garlic, fresh herbs, and tomato paste, then grilled to perfection. Finished with a drizzle of garlic butter and a squeeze of lemon, it’s a quick and vibrant dish perfect for summer gatherings or easy weeknight dinners.

Ingredients

Marinade and Shrimp

  • 1 pound large shrimp (peeled and deveined, or medium shrimp)
  • ⅓ cup olive oil
  • 4 cloves garlic (minced)
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon tomato paste
  • 1 tablespoon chopped fresh basil (or ¾ teaspoon dried basil)
  • 2 teaspoons fresh lemon juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Garlic Butter Sauce

  • 1 clove garlic (minced)
  • ¼ cup salted butter (melted)
  • 1 teaspoon chopped fresh parsley

To Serve

  • Lemon wedges (optional)

Instructions

  1. Prepare garlic butter: In a small bowl, combine the melted butter, minced garlic, and chopped fresh parsley. Set this garlic butter mixture aside to allow flavors to meld.
  2. Marinate shrimp: In a glass bowl, whisk together olive oil, minced garlic, chopped parsley, tomato paste, basil, lemon juice, salt, and black pepper. Add the shrimp to the marinade, tossing to coat evenly. Let the shrimp marinate for at least 20 minutes, or up to 1 hour, to absorb the flavors.
  3. Preheat grill: Heat the grill to medium heat, about 375°F (190°C), ensuring it is clean and lightly oiled to prevent sticking.
  4. Grill shrimp: Thread the marinated shrimp onto skewers to make grilling easier. Place the skewers on the grill and cook for 2-3 minutes per side until the shrimp turn opaque and are just cooked through. Remove shrimp from skewers and transfer to a serving bowl.
  5. Serve with garlic butter: If the garlic butter has solidified, warm it briefly in the microwave to melt. Drizzle the warm garlic butter over the grilled shrimp for extra richness and flavor. Serve immediately with lemon wedges for squeezing over the top, if desired.

Notes

  • For easier grilling, soak wooden skewers in water for 30 minutes before use to prevent burning.
  • Do not overcook shrimp as they can become tough and rubbery; cook just until opaque and firm.
  • You can prepare the garlic butter sauce ahead and reheat before serving.
  • Serve with crusty bread, rice, or a fresh salad to complete the meal.
