- 200g pasta (7.1 oz)
- 1/8 tsp black pepper
- 1/8 tsp red chilli flakes
- 1/4 tsp mixed herbs
- 10g grated Parmesan cheese (around 1/8 cup), plus extra for garnish
Wet Ingredients
- 25g salted butter (1 tbsp + 2 tsps), divided
- 5 cloves garlic, minced
- 1 tbsp tomato paste
- 150ml chicken stock (1/2 cup + 2 tbsps)
Instructions
- Cook the Pasta: Boil your pasta in salted water with a little oil, following the package instructions. Aim for al dente texture—firm with a slight bite. Once cooked, drain the pasta and set aside, reserving some pasta water if needed.
- Sauté Garlic: Heat a pan over low-medium heat and add 15g (1 tbsp) of butter. Let it melt, then add the minced garlic. Cook gently until garlic turns a light golden color, about 1 minute and 10 seconds, avoiding burning.
- Add Tomato Paste: Stir in the tomato paste and cook over medium heat for 1-2 minutes to develop its flavor.
- Create the Sauce: Pour in the chicken stock and add black pepper, red chili flakes, and mixed herbs. Stir to combine and gently bring the mixture to a boil.
- Combine Pasta and Sauce: Add the cooked pasta into the pan and mix well to coat the noodles evenly with the sauce. Cook for about 1 minute over medium-high heat to meld flavors.
- Finish with Butter and Parmesan: Remove the pan from heat. Stir in the remaining 10g (2 tsps) of butter and grated Parmesan cheese, mixing until creamy and combined.
