Ingredients

Steak

  • 2 pounds beef tenderloin, cut into 1-inch cubes (can also use sirloin or ribeye)
  • 1 tablespoon Diamond Crystal Kosher salt (or 1 1/2 teaspoons fine sea salt)
  • 1 teaspoon crushed hot red pepper flakes (optional)
  • 2 tablespoons neutral oil (avocado, vegetable, canola, etc.)

Garlic Butter Sauce

  • 1 stick unsalted butter (8 tablespoons)
  • 8 cloves garlic, minced
  • 1 large shallot, finely minced
  • 3 large green onions, minced
  • 1/4 cup fresh parsley, minced
  • Salt and pepper, to taste


Instructions

  1. Prepare the steak: Cut the beef tenderloin into 1-inch cubes, pat them dry using paper towels, and season evenly with salt.
  2. Heat the pan and sear steak: Preheat a large cast iron skillet over medium-high heat. Add the oil and once it shimmers, place a single layer of steak cubes into the pan, making sure not to overcrowd. Sear each side for 2 minutes until browned, then remove steak to a plate and tent with foil to keep warm. Repeat with any remaining steak.
  3. Make the garlic butter sauce: Reduce heat to low and wipe out most of the oil from the pan using paper towels. Add the butter and shallot to the pan, cooking for about 2 minutes until softened. Add the minced garlic and cook until it becomes fragrant and lightly golden. In the last 30 seconds, stir in the optional crushed red pepper flakes.
  4. Combine and finish: Turn heat to medium, return the steak cubes to the pan, and toss to heat through for approximately 2 minutes. Season with additional salt and pepper if needed. Stir in the minced green onions and parsley.
  5. Serve: Remove from heat and serve the garlic butter steak bites immediately for best flavor and texture.
