Description

This Garlic Butter Steak Bites and Potatoes recipe combines tender sirloin steak cubes with crispy, flavorful Yukon Gold potatoes cooked in a delicious garlic herb butter sauce. Ready in just 20 minutes, this skillet meal is perfect for a quick and satisfying dinner, featuring a rich blend of garlic, rosemary, and oregano that elevates the taste of both the steak and potatoes.

Ingredients

Steak and Seasoning

  • 1½ lbs. sirloin steak, cut into 1-inch cubes (or beef tenderloin, NY strip steak, or stir fry meat)
  • ½ tsp kosher salt
  • ½ tsp ground black pepper

Potatoes and Herbs

  • 1 lb. Yukon Gold potatoes, diced into ½-inch cubes (or red-skinned or fingerling potatoes)
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried oregano

Fats and Oil

  • 1 tbsp olive oil
  • 4 tbsp unsalted butter (divided, ½ stick)

Optional Garnish

  • Freshly chopped parsley

Instructions

  1. Heat the skillet: Place a cast iron skillet over medium-high heat and add 1 tablespoon olive oil and 2 tablespoons butter. Let the butter melt completely to prepare the pan for cooking.
  2. Season the potatoes: In a bowl, toss the diced potatoes with minced garlic, dried rosemary, dried oregano, ½ teaspoon kosher salt, and ½ teaspoon ground black pepper to evenly coat them with seasonings.
  3. Cook the potatoes: Add the seasoned potatoes to the hot skillet. Cook undisturbed for about 4 minutes to develop a crispy surface, then stir and continue cooking for another 3-4 minutes until potatoes are fork-tender. Remove the potatoes from the skillet and set them aside in a bowl.
  4. Increase heat for steak: Return the skillet to the stove and raise the heat to high to prepare for searing the steak for a perfect crust.
  5. Cook steak bites: Add the remaining 2 tablespoons butter, stirring to melt. Add the steak cubes in a single layer and cook for 1 minute without moving, then flip or stir and cook for an additional 1-2 minutes until steak reaches your desired doneness. Remove the skillet from heat.
  6. Toss together: Add the cooked potatoes back into the skillet with the steak. Toss everything to combine well, and season with additional salt and pepper if desired.
  7. Garnish and serve: Sprinkle freshly chopped parsley over the steak and potatoes for a burst of freshness. Serve immediately and enjoy your flavorful garlic butter steak bites and potatoes!

Notes

  • Use a cast iron skillet for best searing and even cooking.
  • Choose potatoes that hold their shape well like Yukon Gold, red-skinned, or fingerlings.
  • Do not overcrowd the pan when cooking steak to ensure proper browning.
  • The recipe can be adapted using different cuts of beef such as tenderloin or NY strip.
  • Adjust cooking time of steak based on thickness and preferred doneness.
  • Fresh herbs like rosemary or parsley can be substituted or added per taste.
