  • 1 teaspoon paprika
  • 1/2 teaspoon smoked paprika
  • Black pepper, to taste
  • Sea salt, to taste
  • Pinch of cayenne pepper
  • 1 medium head of broccoli, cut into small florets
  • 1/3 cup vegetable broth
  • 1 (15 oz) can chickpeas, rinsed and drained

Sauce

  • 1/2 cup water
  • 3 tablespoons soy sauce (gluten-free if needed)
  • 2 tablespoons rice vinegar or balsamic vinegar
  • 2 tablespoons maple syrup or any other sweetener
  • 1 tablespoon cornstarch

For Serving

  • Cooked rice of choice


Instructions

  1. Prepare the Aromatics: Heat oil in a pan over medium heat. Add the diced onion, minced ginger, garlic, and all spices including onion powder, paprika, smoked paprika, black pepper, sea salt, and a pinch of cayenne pepper. Sauté for 3-4 minutes until fragrant and the onions are softened.
  2. Cook the Broccoli: Add the broccoli florets and vegetable broth to the pan. Stir and cook, frying until the broccoli is tender but still firm, about 10 minutes.
  3. Mix the Sauce: While the broccoli is cooking, in a medium bowl whisk together water, soy sauce, rice or balsamic vinegar, maple syrup, and cornstarch until well combined.
  4. Combine Sauce and Chickpeas: Pour the prepared sauce into the pan with the broccoli and add the rinsed chickpeas. Stir to combine all ingredients evenly.
  5. Simmer the Stir Fry: Bring the mixture to a boil and let it simmer for a few minutes until the sauce thickens and coats the broccoli and chickpeas nicely.
  6. Adjust Seasonings: Taste the stir fry and add more salt, pepper, or cayenne pepper if needed according to your preference.
