- 1 heaped tablespoon fresh ginger, minced
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon smoked paprika
- Black pepper, to taste
- Sea salt, to taste
- Pinch of cayenne pepper
- 1 medium head of broccoli, cut into small florets
- 1/3 cup vegetable broth
- 1 (15 oz) can chickpeas, rinsed and drained
Sauce
- 1/2 cup water
- 3 tablespoons soy sauce (gluten-free if needed)
- 2 tablespoons rice vinegar or balsamic vinegar
- 2 tablespoons maple syrup or any other sweetener
- 1 tablespoon cornstarch
For Serving
- Cooked rice of choice
Instructions
- Prepare the Aromatics: Heat oil in a pan over medium heat. Add the diced onion, minced ginger, garlic, and all spices including onion powder, paprika, smoked paprika, black pepper, sea salt, and a pinch of cayenne pepper. Sauté for 3-4 minutes until fragrant and the onions are softened.
- Cook the Broccoli: Add the broccoli florets and vegetable broth to the pan. Stir and cook, frying until the broccoli is tender but still firm, about 10 minutes.
- Mix the Sauce: While the broccoli is cooking, in a medium bowl whisk together water, soy sauce, rice or balsamic vinegar, maple syrup, and cornstarch until well combined.
- Combine Sauce and Chickpeas: Pour the prepared sauce into the pan with the broccoli and add the rinsed chickpeas. Stir to combine all ingredients evenly.
- Simmer the Stir Fry: Bring the mixture to a boil and let it simmer for a few minutes until the sauce thickens and coats the broccoli and chickpeas nicely.
- Adjust Seasonings: Taste the stir fry and add more salt, pepper, or cayenne pepper if needed according to your preference.
- Serve: Serve the Garlic Broccoli Stir Fry alone or over cooked rice. Enjoy your flavorful, nutritious meal!
