Ingredients
Vegetables and Aromatics
- 1 tablespoon oil (see recipe notes for options)
- 1 onion, diced
- 5 garlic cloves, minced
- 1 heaped tablespoon fresh ginger, minced
- 1 medium head of broccoli, cut into small florets
Spices
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon smoked paprika
- Black pepper, to taste
- Sea salt, to taste
- Pinch of cayenne pepper
Liquids and Sauces
- 1/3 cup vegetable broth
- 1/2 cup water
- 3 tablespoons soy sauce (gluten-free if needed)
- 2 tablespoons rice vinegar or balsamic vinegar
- 2 tablespoons maple syrup (or any other sweetener)
Other
- 1 (15 oz) can chickpeas, rinsed and drained
- 1 tablespoon cornstarch
- Cooked rice of choice, for serving
Instructions
- Sauté aromatics and spices: Heat oil in a pan over medium heat. Add diced onion, minced ginger, minced garlic, and all the spices (onion powder, paprika, smoked paprika, black pepper, sea salt, and cayenne). Sauté for 3-4 minutes until fragrant and the onion softens.
- Cook broccoli: Add the broccoli florets and vegetable broth to the pan. Fry the mixture, stirring occasionally, until the broccoli is tender but still slightly crisp, about 10 minutes.
- Prepare the sauce: While the broccoli cooks, combine water, soy sauce, vinegar, maple syrup, and cornstarch in a medium bowl. Whisk thoroughly until the cornstarch is fully dissolved and the sauce is smooth.
- Add sauce and chickpeas: Pour the prepared sauce into the pan with the broccoli. Add the rinsed and drained chickpeas.
- Simmer the stir fry: Bring the contents to a boil, allowing the sauce to thicken and simmer for a few minutes while stirring. This helps the flavors blend and the sauce coat the veggies and chickpeas.
- Season to taste: Taste the stir fry and adjust seasoning as desired by adding more salt, black pepper, or cayenne pepper.
- Serve: Serve the garlic broccoli stir fry alone or over cooked rice of your choice. Enjoy this wholesome and tasty meal!
