Ingredients
Dough Ingredients
- 4 1/2 tablespoons unsalted butter
- 2 tablespoons minced garlic
- 3 1/2 cups + 1 tablespoon all-purpose flour (see notes for measuring)
- 3 tablespoons chopped fresh parsley
- 1 tablespoon granulated sugar
- 2 1/4 teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1 cup whole or 2% milk (warmed to 110°F)
- 1 large egg (room temperature)
- 1 beaten egg, for brushing the tops
Garlic Butter Topping
- 2 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh parsley
- Flaky sea salt (for finishing)
Instructions
- Prepare Pan: Lightly butter the bottom and sides of a 9×13 inch baking pan and set it aside to ready for the rolls.
- Cook Garlic Butter for Dough: In a small pot, melt 4 1/2 tablespoons of butter and add 2 tablespoons minced garlic. Cook for 1-2 minutes until fragrant, then remove from heat and allow to cool while preparing other ingredients.
- Mix and Knead Dough: In a stand mixing bowl, whisk together the flour, parsley, sugar, yeast, and salt. Add the warmed milk, room temperature egg, and the cooled garlic butter mixture. Knead with a dough hook on low speed until dough is smooth, soft, and slightly tacky, about 10-12 minutes. Add additional flour one tablespoon at a time if too sticky.
- Shape Rolls: Divide the dough into 12 equal portions (about 67 grams each). Shape each into a smooth ball, pinching the bottom to seal the seam, then place them in the prepared pan.
- First Rise: Cover the pan with plastic wrap or a clean towel and allow the dough to rise in a warm place until doubled in size, approximately 1-2 hours.
- Preheat Oven: Set the oven to 350°F (180°C) while dough is rising.
- Apply Egg Wash: Once risen, brush the tops of the rolls with the beaten egg to promote browning and shine during baking.
- Bake Rolls: Bake for 20-30 minutes or until the tops turn a beautiful golden brown.
- Make Garlic Butter Topping: While baking, melt 2 tablespoons of butter in a pot and add 1 tablespoon minced garlic. Cook for 1-2 minutes until fragrant. Remove from heat and stir in 1 tablespoon chopped fresh parsley.
- Brush and Finish: Immediately after removing the rolls from the oven, brush them generously with the garlic butter mixture. Sprinkle flaky sea salt on top if desired and serve warm for best flavor.
Notes
- For accurate flour measurement, spoon flour into your measuring cup and level it off rather than scooping directly to prevent dense bread.
- Using a kitchen scale to divide dough ensures even-sized rolls that bake uniformly.
- Milk should be warmed to 110°F to activate the yeast without killing it.
- Allowing the rolls to rise in a warm environment is key to achieving a soft, fluffy texture.
- These rolls are best served fresh but can be reheated gently in the oven to restore softness.
