Description

Funeral potatoes are a classic comfort food casserole featuring shredded hash browns baked in a creamy mixture of sour cream, cream of chicken soup, cheese, and onions, topped with a crunchy buttered cornflake crust. This easy-to-make dish is perfect for gatherings, potlucks, or a cozy family meal.

Ingredients

Potato Casserole Mixture

  • 2 cups sour cream
  • 1 (10.5-oz.) can cream of chicken soup
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp garlic powder
  • 1 (30-oz.) pkg. frozen shredded hash brown potatoes, thawed
  • 2 cups shredded Cheddar cheese (about 8 oz.)
  • 3/4 cup finely chopped white onion

Cornflake Topping

  • 2 heaping cups cornflake cereal, coarsely crushed (2 1/2 oz.)
  • 1/4 cup unsalted butter, melted

Instructions

  1. Prepare oven and baking dish: Preheat your oven to 350°F. Lightly grease a 9- x 13-inch baking dish to prevent sticking.
  2. Make potato casserole mixture: In a large mixing bowl, whisk together the sour cream, cream of chicken soup, kosher salt, freshly ground black pepper, and garlic powder until smooth. Gently fold in the thawed shredded hash browns, shredded Cheddar cheese, and finely chopped white onion until evenly combined.
  3. Add casserole mixture to baking dish: Pour the potato mixture into the prepared baking dish, spreading it into an even layer for uniform cooking.
  4. Make cornflake topping: In a small bowl, mix the crushed cornflake cereal with the melted unsalted butter, stirring to ensure all flakes are coated with butter.
  5. Bake casserole: Evenly sprinkle the butter-coated cornflake topping over the potato mixture. Bake in the preheated oven for 35 to 40 minutes, or until the topping is crispy and golden brown and the casserole is heated through.

Notes

  • Be sure to thaw the frozen hash browns fully for even cooking and better texture.
  • You can substitute cream of chicken soup with cream of mushroom soup for a vegetarian-friendly option.
  • For added flavor, consider mixing in cooked, diced bacon or chives.
  • Let the casserole rest for 5 minutes before serving to set.
  • This dish can be prepared a day ahead and refrigerated; just add extra baking time if baking cold.
