Ingredients
Cookie Dough
- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg, room temperature
- 2 teaspoons vanilla extract
- 2 1/2 cups (315g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Frosting
- 8 oz (226g) cream cheese, softened
- 1/4 cup (57g) unsalted butter, softened
- 1 1/2 cups (180g) powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
Fruit Topping
- Assorted fresh fruit (choose 3–5 types): strawberries (hulled and sliced), blueberries, kiwi (peeled and sliced), mandarin oranges (drained if canned), raspberries or blackberries, mango (peeled and diced), grapes (halved)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and prepare two baking sheets by lining them with parchment paper or silicone baking mats to prevent sticking.
- Make Cookie Dough: In a large bowl, cream together 1 cup softened butter and 1 cup sugar with a mixer until light and fluffy, about 2 minutes. Beat in the egg and 2 teaspoons vanilla extract, scraping down the bowl to mix evenly.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing on low until just combined. If the dough feels sticky, incorporate additional flour one tablespoon at a time to achieve the right consistency.
- Shape Cookies: Scoop the dough into balls weighing about 1 1/2 tablespoons (30g) each. Roll each ball smooth, place them 2 inches apart on the baking sheets, and gently flatten to about 1/2 inch thickness.
- Bake: Bake the cookies for 10 to 12 minutes until the edges are set but the centers remain pale. Avoid overbaking to keep them soft.
- Cool: Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before frosting.
- Prepare Frosting: Beat the cream cheese and 1/4 cup softened butter together until smooth and creamy, about 2 minutes. Add powdered sugar, vanilla extract, and lemon zest, and beat until the mixture is fluffy. Adjust the frosting consistency with a splash of milk or extra powdered sugar if necessary.
- Prepare Fruit: Wash and dry your selected fruits. Slice strawberries, kiwi, and mango thinly; halve grapes; keep berries whole for the best presentation.
- Frost Cookies: Spread a generous, even layer of the cream cheese frosting onto each cooled cookie using a small offset spatula or butter knife.
- Decorate: Arrange assorted fresh fruit on top of each frosted cookie as desired, pressing gently to adhere the fruit to the frosting.
- Optional Chill: For firmer frosting and juicier fruit, chill the cookies in the refrigerator for 20 to 30 minutes before serving.
