Ingredients
Cookie Crust
- 1 1/2 cups all-purpose flour (plus extra for rolling)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter (softened)
- 1/2 cup packed light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
Cream Cheese Frosting
- 1 (8 ounce) package low-fat cream cheese
- 2-3 tablespoons maple syrup or honey (or 1 cup powdered sugar)
- 1 teaspoon vanilla extract
- pinch of fine sea salt
Fruit Topping
- Fresh strawberries
- Fresh blueberries
- Fresh raspberries, blackberries, or any other fruit that sounds good
- Optional: fresh honey (for drizzling)
Instructions
- Preheat the Oven and Prepare Pan: Heat your oven to 350°F (175°C). Grease your chosen baking vessel, either a quarter sheet pan, a 9 x 13-inch baking dish, or a 12-inch round pizza pan, with cooking spray to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set this mixture aside for incorporation into the dough later.
- Cream Butter and Sugar, Add Wet Ingredients: Using a stand mixer with the paddle attachment or a hand mixer, beat the softened butter and light brown sugar on medium speed until light and fluffy, approximately 2 minutes. Add the egg, vanilla extract, and almond extract, then continue beating on medium speed until everything is combined. Be sure to scrape down the sides of the bowl as needed for an even mix.
- Combine Dry and Wet Ingredients: Add the flour mixture to the wet ingredients and beat on low speed just until combined. Avoid over-mixing to maintain a tender crust.
- Press Dough and Bake: Press the dough evenly into the prepared pan. Use a fork to poke a few holes in the dough to prevent bubbling during baking. Bake for 15-18 minutes or until the crust is lightly golden brown. Remove from oven and transfer to a wire rack to cool for 20 minutes.
- Prepare the Frosting: While the crust cools, whisk together the cream cheese, maple syrup or honey (or powdered sugar), vanilla extract, and a pinch of fine sea salt until smooth and well combined.
- Assemble the Fruit Pizza: Spread the cream cheese frosting evenly over the cooled cookie crust. Arrange your choice of fresh fruit, such as strawberries, blueberries, raspberries, and blackberries, over the frosting. Optionally, drizzle with fresh honey for added sweetness and shine.
- Serve: Slice the fruit pizza into portions and enjoy as a colorful and refreshing dessert.
Notes
- You can substitute the cream cheese frosting sweetener between maple syrup, honey, or powdered sugar depending on your sweetness preference and dietary needs.
- Make sure not to over-mix the dough to keep the crust tender.
- Fresh fruits should be added just before serving to keep them vibrant and fresh.
- For a thicker crust, you can press the dough into a deeper pan or add a little extra flour if dough feels too soft.
- Store leftovers covered in the refrigerator for up to 3 days.
- Feel free to customize with seasonal fruits or berries you have on hand.
