Description

Frozen Cottage Cheese Bark is a refreshing and nutritious snack made by blending creamy cottage cheese with honey and peanut butter, then topped with swirled melted chocolate and crunchy granola before freezing to a firm, bark-like consistency. This easy no-bake recipe offers a delicious combination of creamy, sweet, and crunchy textures, perfect for a healthy treat or snack.

Ingredients

Main Ingredients

  • 2 cups (16 oz) cottage cheese (Good Culture whole milk recommended)
  • 2 Tablespoons honey
  • 2 Tablespoons peanut butter

Toppings

  • 3 Tablespoons chocolate chips (Lily’s chocolate chips used)
  • 3 Tablespoons granola of choice

Instructions

  1. Blend: In a blender or food processor, combine the cottage cheese, honey, and peanut butter. Blend until the mixture is smooth and creamy, ensuring all ingredients are well incorporated.
  2. Spread: Pour the blended mixture onto a rimmed baking sheet lined with parchment paper. Use a spatula or spoon to spread it evenly into a rectangular shape about ¼ of an inch thick.
  3. Swirl Chocolate: Melt the chocolate chips separately. Drop teaspoon-sized dollops of the melted chocolate onto the cottage cheese layer, then use a knife to swirl the chocolate gently into the mixture, creating a marbled effect.
  4. Add Toppings: Sprinkle the granola evenly over the top of the chocolate-swirled cottage cheese layer for added crunch and flavor.
  5. Freeze: Place the prepared baking sheet in the freezer for about 3 hours or until the cottage cheese bark is firm enough to break apart.
  6. Break and Serve: Once frozen solid, cut or break the bark into 16-20 pieces. Serve immediately or store leftovers in a sealed freezer bag or airtight container for up to 3 months.

Notes

  • Use whole milk cottage cheese for creamier texture and better flavor.
  • Adjust sweetness by modifying the amount of honey used.
  • Choose granola according to your preference; nutty or fruity granola pairs well.
  • Store leftovers properly in the freezer to maintain freshness and texture.
  • This bark is best enjoyed straight from the freezer to keep it firm.
