Ingredients
For the Fried Pickles
- Oil for frying (enough to fill 3 inches in a deep pot)
- 1 1/4 cup all-purpose flour, divided (1 cup + 1/4 cup)
- 1/2 teaspoon salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 10 ounces club soda
- 10 ounces dill pickle chips (of your choice)
For the Sriracha Dill Dipping Sauce
- 1/2 cup sour cream
- 1/3 cup mayonnaise
- 2 tablespoons milk
- 1 tablespoon Sriracha
- 1 teaspoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper, to taste
Instructions
- Heat the oil: Fill a deep pot with 3 inches of oil and heat it to 375ºF (190ºC) to prepare for frying.
- Prepare the pickles: Drain the pickle chips well and place them on paper towels to remove excess moisture. Pat dry to ensure the batter adheres properly.
- Make the batter: In a medium bowl, combine 1 cup of flour with salt, black pepper, paprika, chili powder, garlic powder, onion powder, cayenne pepper, and 10 ounces of club soda. Stir well and let the batter rest for 5 minutes.
- Coat the pickles: Dredge each pickle slice in the remaining 1/4 cup flour, shaking off excess flour, then dip into the batter allowing excess to drip back into the bowl.
- Fry the pickles: Fry about 8-10 battered pickle slices at a time in the hot oil until they turn golden brown and crispy, approximately 3-5 minutes. Remove and drain on paper towels.
- Make the dipping sauce: In a bowl, combine sour cream, mayonnaise, milk, Sriracha, Worcestershire sauce, garlic powder, onion powder, paprika, salt, and pepper. Stir until smooth and well combined, then cover and refrigerate until ready to serve.
- Serve: Serve the hot fried pickles with the chilled Sriracha dill dipping sauce for dipping.
